So, I will be releasing sections of my book on my blog and here on Steemit! <i>How To Be Single</i> is a fresh perspective on life, love, and self empowerment. I genuinely don't know how I would describe this book just yet since it's still being developed so I would LOVE some feedback on your take on it. As of now, it's written in a similar style as Mark Manson's <i>The Subtle Art Of Not Giving A F*ck</i> and Jen Sincero's <i>You Are A Badass</i>. It's your "Not So Typical" personal development book with a series of hilarious (true), inspiring stories and lessons that I have experienced throughout my twenties on my quest to find love. Along the way, I discovered the happiness and fulfillment I desired in the most backwards, counterintuitive way you'd imagine. This book is a series of stories and lessons written by a serial monogamist, a hopeless romantic, and a total hot mess... me! Although I cannot guarantee it will be posted in sequential order, it will still be written in cohesive sections so you will still get some closure after each read. I plan to write sections that will take about 10-15 min to read so I hope you can follow along easily! I think being in a relationship is the best thing in the world. Finding someone that makes your heart feel like it just ran a 5k without even having to go to the gym… That person that makes you become completely antisocial when you’re out with your friends because you’re too busy texting one another… That person that agrees to actively participate in your hobbies… like go to a hot yoga class… Even though it’s just an excuse to see him sweaty without his shirt off… or finally pick up acro-yoga...  When you find someone you can do all that cute couple-y crap you see everyone doing on social media, like take cute #FitCouple pictures at the gym, and go to brunch without plastered on bottomless mimosas, finally visit a pottery barn without the sales person feeling sorry for you after you’ve been “just looking” every time, or finally receiving a wedding invitation with a +1 on it! Heck yeah! Being in a relationship is awesome! But it’s not always unicorns and rainbows. Sure, it all starts off that way but then after some time… shit starts to get real. After a while you’ll reach that phase where you can finally just be yourself and let your freak flag fly! <h1>Bye bye makeup! Hello sweatpants!</h1> Eventually you’ll be wondering why you can no longer fit into your skinny jeans, then you’ll realize all those things you once thought were cute and endearing about him are now annoying AF, and then you’ll accidentally blurt out that you hate his mother… And before you know it you’re having the same fight over and over and over again until the inevitable happens… You break up. Story of my life. But no matter how many times I’ve had my heart broken, I’ve never given up on love. When one relationship failed I’d pick myself up, take a bomb-ass selfie, then put myself out there and try again. So much, in fact, that my relationship history has just turned into a big joke with my family. Every year my family spends Thanksgiving at our cousin’s ranch in Lake Tahoe. I have a pretty big family so every year there is an open invitation for us to bring guests. So, I, of course, will always invite my current beau to join us for the holiday. Being the romantic that I am, I always go into my next relationship with the hope that “he is the one”. I mean, can you blame me for being such an optimist on love? I’d rather go in to each relationship with an open mind and open heart and anticipate that this relationship is finally going to be the one that sticks than go into a relationship like a wounded old spinster: Bitter and thinking every man is “the devil” only to wind up swearing off men all together and become a lesbian, or to become a viral headline at the announcement of your death… <h1><i>“Lonely Woman Found Dead In Her Reclining Chair. Face Eaten By Her 14 Cats”</i></h1> But over the years, my family continued to meet guy after guy, and whether or not this guy would make it to next Thanksgiving would be the big laugh of the weekend. I know it sounds kind of pathetic, right? Well, no matter how pathetic and sad it sounds, I never let their jokes dictate my quest for love. As I’m sitting here writing this story, I can’t help but notice that there is still no ring on this damn finger of mine. But you know what? That’s fine with me. Because right now I’m in the healthiest, most successful, satisfying, and fulfilling relationship I’ve ever been in. And I don’t need a ring on my finger to determine my level of happiness or to remind me that im almost 29 and still not married. But I don’t think I would haven been able to get where I am today without learning one very important lesson. Well, one very important lesson that turned into series of lessons that would change the course of my life, and how I love, forever. They say that in order to truly love someone you need to learn to truly love yourself first. It’s one of those phrases that’s been tossed around so many different times and rephrased by so many different people that no one really knows the origin. But no matter who wrote it, it’s the most real advice that you could ever read if you want to experience true fulfillment in life, and in love. Maybe you’re reading this right now and you’ve already found the love of your life and you might be thinking to yourself that this series of lessons won’t apply to you… But I want to encourage you to read on, because no matter what your relationship status is, I PROMISE you will learn something about yourself that you didn’t already know before. Because these lessons are for anyone that feels like there is a small piece of themselves missing. For anyone that wants to create a life of abundance and fulfillment in more ways than just finding love. And for anyone that is ready to invite a positive change into their life. And this lesson is one of the most important things you can do for your personal growth… <h1>And that is learning how to be happy and fulfilled in life, alone.</h1> Completely alone… <b>Relationship Status: Single, not ready to mingle.</b> It took me a LONG time before I realized why learning how to be single was so important. Like most high school girls, I started dating when I was about 16 years old. I’d date a guy and expect everything to be like it was in the movies. Boy meets Girl. Boy and Girl fall in love. And then Boy and Girl live happily ever after. When I was with my first boyfriend, I lived in this fantasy world where I thought “Nothing can tear us apart! We’re gonna be together forever!”… until the slutty girl from the all-girls high school put her tongue down his throat…  (*Enter: Maury Povich)… and then I realized the reality of the dating world. That dating was like a baby learning how to eat with a fork: Messy, unpredicable, dramatic, and will most likely end up in a fit of tears. But that didn’t stop yours truly from puttin’ herself out there! And when I say “put myself out there”, what I really mean to say is that I turned out to be a serial monogamist. Yup, that’s right… This girl loves herself a good ‘ol long term, serious commitment! The only problem was I always seemed to end up with these loser guys that just weren’t on the same page as me. So, leave it to me to be “the one that will finally change them” and stick around through all the bullshit they put me through (I’m not even lying I’m literally laughing out loud right now because of how stupid and naiive I used to be). Fast forward 12 years… Looking back, there was really only one time within all those years I can say I was actually “single”. And I’m not counting the few weeks or months of going on dates before the next “boyfriend” came along. I’m talking about being truly single. No dates. No prospects. No flirty texting… nothing. <h1>“Liz, party of one?”</h1> Yup, siiiiiiiiiiingle. So, when was the last time I was actually single? So, I will be releasing sections of my book on my blog and here on Steemit! <i>How To Be Single</i> is a fresh perspective on life, love, and self empowerment. I genuinely don't know how I would describe this book just yet since it's still being developed so I would LOVE some feedback on your take on it. As of now, it's written in a similar style as Mark Manson's <i>The Subtle Art Of Not Giving A F*ck</i> and Jen Sincero's <i>You Are A Badass</i>. It's your "Not So Typical" personal development book with a series of hilarious (true), inspiring stories and lessons that I have experienced throughout my twenties on my quest to find love. Along the way, I discovered the happiness and fulfillment I desired in the most backwards, counterintuitive way you'd imagine. This book is a series of stories and lessons written by a serial monogamist, a hopeless romantic, and a total hot mess... me! Although I cannot guarantee it will be posted in sequential order, it will still be written in cohesive sections so you will still get some closure after each read. I plan to write sections that will take about 10-15 min to read so I hope you can follow along easily! I think being in a relationship is the best thing in the world. Finding someone that makes your heart feel like it just ran a 5k without even having to go to the gym… That person that makes you become completely antisocial when you’re out with your friends because you’re too busy texting one another… That person that agrees to actively participate in your hobbies… like go to a hot yoga class… Even though it’s just an excuse to see him sweaty without his shirt off… or finally pick up acro-yoga...  When you find someone you can do all that cute couple-y crap you see everyone doing on social media, like take cute #FitCouple pictures at the gym, and go to brunch without plastered on bottomless mimosas, finally visit a pottery barn without the sales person feeling sorry for you after you’ve been “just looking” every time, or finally receiving a wedding invitation with a +1 on it! Heck yeah! Being in a relationship is awesome! But it’s not always unicorns and rainbows. Sure, it all starts off that way but then after some time… shit starts to get real. After a while you’ll reach that phase where you can finally just be yourself and let your freak flag fly! <h1>Bye bye makeup! Hello sweatpants!</h1> Eventually you’ll be wondering why you can no longer fit into your skinny jeans, then you’ll realize all those things you once thought were cute and endearing about him are now annoying AF, and then you’ll accidentally blurt out that you hate his mother… And before you know it you’re having the same fight over and over and over again until the inevitable happens… You break up. Story of my life. But no matter how many times I’ve had my heart broken, I’ve never given up on love. When one relationship failed I’d pick myself up, take a bomb-ass selfie, then put myself out there and try again. So much, in fact, that my relationship history has just turned into a big joke with my family. Every year my family spends Thanksgiving at our cousin’s ranch in Lake Tahoe. I have a pretty big family so every year there is an open invitation for us to bring guests. So, I, of course, will always invite my current beau to join us for the holiday. Being the romantic that I am, I always go into my next relationship with the hope that “he is the one”. I mean, can you blame me for being such an optimist on love? I’d rather go in to each relationship with an open mind and open heart and anticipate that this relationship is finally going to be the one that sticks than go into a relationship like a wounded old spinster: Bitter and thinking every man is “the devil” only to wind up swearing off men all together and become a lesbian, or to become a viral headline at the announcement of your death… <h1><i>“Lonely Woman Found Dead In Her Reclining Chair. Face Eaten By Her 14 Cats”</i></h1> But over the years, my family continued to meet guy after guy, and whether or not this guy would make it to next Thanksgiving would be the big laugh of the weekend. I know it sounds kind of pathetic, right? Well, no matter how pathetic and sad it sounds, I never let their jokes dictate my quest for love. As I’m sitting here writing this story, I can’t help but notice that there is still no ring on this damn finger of mine. But you know what? That’s fine with me. Because right now I’m in the healthiest, most successful, satisfying, and fulfilling relationship I’ve ever been in. And I don’t need a ring on my finger to determine my level of happiness or to remind me that im almost 29 and still not married. But I don’t think I would haven been able to get where I am today without learning one very important lesson. Well, one very important lesson that turned into series of lessons that would change the course of my life, and how I love, forever. They say that in order to truly love someone you need to learn to truly love yourself first. It’s one of those phrases that’s been tossed around so many different times and rephrased by so many different people that no one really knows the origin. But no matter who wrote it, it’s the most real advice that you could ever read if you want to experience true fulfillment in life, and in love. Maybe you’re reading this right now and you’ve already found the love of your life and you might be thinking to yourself that this series of lessons won’t apply to you… But I want to encourage you to read on, because no matter what your relationship status is, I PROMISE you will learn something about yourself that you didn’t already know before. Because these lessons are for anyone that feels like there is a small piece of themselves missing. For anyone that wants to create a life of abundance and fulfillment in more ways than just finding love. And for anyone that is ready to invite a positive change into their life. And this lesson is one of the most important things you can do for your personal growth… <h1>And that is learning how to be happy and fulfilled in life, alone.</h1> Completely alone… <b>Relationship Status: Single, not ready to mingle.</b> It took me a LONG time before I realized why learning how to be single was so important. Like most high school girls, I started dating when I was about 16 years old. I’d date a guy and expect everything to be like it was in the movies. Boy meets Girl. Boy and Girl fall in love. And then Boy and Girl live happily ever after. When I was with my first boyfriend, I lived in this fantasy world where I thought “Nothing can tear us apart! We’re gonna be together forever!”… until the slutty girl from the all-girls high school put her tongue down his throat…  (*Enter: Maury Povich)… and then I realized the reality of the dating world. That dating was like a baby learning how to eat with a fork: Messy, unpredicable, dramatic, and will most likely end up in a fit of tears. But that didn’t stop yours truly from puttin’ herself out there! And when I say “put myself out there”, what I really mean to say is that I turned out to be a serial monogamist. Yup, that’s right… This girl loves herself a good ‘ol long term, serious commitment! The only problem was I always seemed to end up with these loser guys that just weren’t on the same page as me. So, leave it to me to be “the one that will finally change them” and stick around through all the bullshit they put me through (I’m not even lying I’m literally laughing out loud right now because of how stupid and naiive I used to be). Fast forward 12 years… Looking back, there was really only one time within all those years I can say I was actually “single”. And I’m not counting the few weeks or months of going on dates before the next “boyfriend” came along. I’m talking about being truly single. No dates. No prospects. No flirty texting… nothing. <h1>“Liz, party of one?”</h1> Yup, siiiiiiiiiiingle. So, when was the last time I was actually single? When one relationship failed I’d pick myself up, take a bomb-ass selfie, then put myself out there and try again. So much, in fact, that my relationship history has just turned into a big joke with my family. Every year my family spends Thanksgiving at our cousin’s ranch in Lake Tahoe. I have a pretty big family so every year there is an open invitation for us to bring guests. So, I, of course, will always invite my current beau to join us for the holiday. Being the romantic that I am, I always go into my next relationship with the hope that “he is the one”. I mean, can you blame me for being such an optimist on love? I’d rather go in to each relationship with an open mind and open heart and anticipate that this relationship is finally going to be the one that sticks than go into a relationship like a wounded old spinster: Bitter and thinking every man is “the devil” only to wind up swearing off men all together and become a lesbian, or to become a viral headline at the announcement of your death… <h1><i>“Lonely Woman Found Dead In Her Reclining Chair. Face Eaten By Her 14 Cats”</i></h1> But over the years, my family continued to meet guy after guy, and whether or not this guy would make it to next Thanksgiving would be the big laugh of the weekend. I know it sounds kind of pathetic, right? Well, no matter how pathetic and sad it sounds, I never let their jokes dictate my quest for love. As I’m sitting here writing this story, I can’t help but notice that there is still no ring on this damn finger of mine. But you know what? That’s fine with me. Because right now I’m in the healthiest, most successful, satisfying, and fulfilling relationship I’ve ever been in. And I don’t need a ring on my finger to determine my level of happiness or to remind me that im almost 29 and still not married. But I don’t think I would haven been able to get where I am today without learning one very important lesson. Well, one very important lesson that turned into series of lessons that would change the course of my life, and how I love, forever. They say that in order to truly love someone you need to learn to truly love yourself first. It’s one of those phrases that’s been tossed around so many different times and rephrased by so many different people that no one really knows the origin. But no matter who wrote it, it’s the most real advice that you could ever read if you want to experience true fulfillment in life, and in love. Maybe you’re reading this right now and you’ve already found the love of your life and you might be thinking to yourself that this series of lessons won’t apply to you… But I want to encourage you to read on, because no matter what your relationship status is, I PROMISE you will learn something about yourself that you didn’t already know before. Because these lessons are for anyone that feels like there is a small piece of themselves missing. For anyone that wants to create a life of abundance and fulfillment in more ways than just finding love. And for anyone that is ready to invite a positive change into their life. And this lesson is one of the most important things you can do for your personal growth… <h1>And that is learning how to be happy and fulfilled in life, alone.</h1> Completely alone… <b>Relationship Status: Single, not ready to mingle.</b> It took me a LONG time before I realized why learning how to be single was so important. Like most high school girls, I started dating when I was about 16 years old. I’d date a guy and expect everything to be like it was in the movies. Boy meets Girl. Boy and Girl fall in love. And then Boy and Girl live happily ever after. When I was with my first boyfriend, I lived in this fantasy world where I thought “Nothing can tear us apart! We’re gonna be together forever!”… until the slutty girl from the all-girls high school put her tongue down his throat…  (*Enter: Maury Povich)… and then I realized the reality of the dating world. That dating was like a baby learning how to eat with a fork: Messy, unpredicable, dramatic, and will most likely end up in a fit of tears. But that didn’t stop yours truly from puttin’ herself out there! And when I say “put myself out there”, what I really mean to say is that I turned out to be a serial monogamist. Yup, that’s right… This girl loves herself a good ‘ol long term, serious commitment! The only problem was I always seemed to end up with these loser guys that just weren’t on the same page as me. So, leave it to me to be “the one that will finally change them” and stick around through all the bullshit they put me through (I’m not even lying I’m literally laughing out loud right now because of how stupid and naiive I used to be). Fast forward 12 years… Looking back, there was really only one time within all those years I can say I was actually “single”. And I’m not counting the few weeks or months of going on dates before the next “boyfriend” came along. I’m talking about being truly single. No dates. No prospects. | body |  Have you ever heard of the Dimensions of Wellness? Surprisingly, not many people have. The Dimensions of Wellness are the 8 areas of your life that are scientifically proven to correlate with overall happiness and developing a good quality of life. Understanding your role in each of these different categories will help you identify the areas of your life that might need more work than others when it comes to developing a feeling of personal satisfaction. As you read through each dimension of wellness you might realize immediately where you fall short, or you might recognize your strong areas, but what is important to remember here is there is always room for improvement no matter what. It’s also important to keep an open mind about inviting change into your life because although we might believe we have a strong connection of success within one of these categories, sometimes we can be blind to the things that need improvement the most. For example, you can think that you have the best communication skills ever but the reality is that the relationships you create are lacking depth, which might indicate that you can, in fact, improve on your communication skills. This is just an example but you get the idea. This multidimensional concept is a full integration and pursuit of continued growth and balance. Each dimension contributes to our own sense of wellness or quality of life, and each affects and overlaps the others. Like I mentioned before, one may be more prominent than the others, but neglecting any one dimension for any length of time has adverse effects on your overall health which is why this is extremely important to address. So what are the dimensions of wellness? They are Emotional, Physical, Social, Occupational, Financial, Environmental, Spiritual, and Intellectual. <b><h1>1. Emotional Wellness</b></h1> Emotional wellness, in short, is self-awareness, self-confidence, and self-acceptance. But if we expand on those, emotional wellness is coping effectively with life and creating satisfying relationships. It also involves being attentive to your thoughts, feelings, and behaviors, whether positive or negative. Emotional Wellness implies the ability to be aware of and accept our feelings, rather than deny them. It is also about having an optimistic approach to life, and enjoy life despite its occasional disappointments and frustrations. Life is unpredictable and the reason emotional wellness is so important is because how you control your emotions determines your experience in the world. <b><h1>2. Physical Wellness</b></h1> Physical wellness promotes the proper care of our bodies for optimal health and functioning. Overall physical wellness encourages the balance of physical activity, nutrition and mental well-being to keep your body in top condition. There are 4 different characteristics of physical activity: <i>Cardiovascular Training:</i> This type of physical activity increases your heart rate for a duration of time and there are numerous benefits. To name a few it promotes weight loss, it develops a strong heart and lunges, it reduces stress and your risk for diseases like heart disease, and also promotes better sleep. <i>Flexibility Training:</i> This type of training prevents injuries and has many other benefits as well. For instance, flexibility training allows for greater movement and improves posture, increases physical and mental relaxation, and releases muscular tension and soreness. <i>Resistance Training:</i> To put it simple resistance can be any stress placed on the muscles. Examples include bodyweight training, resistance bands, or the use of other training equipment like dumbbells, barbells, or weight machines. Resistance training has many positive benefits on the body like protecting bone health and muscle mass, helps you develop better body mechanics, and it even promotes fat loss. <i>Recreational Sports and Activities:</i> This can be anything from baseball, soccer, and swimming, to hiking, or rock climbing. Another aspect of Physical Wellness is understanding the need for proper diet and nutrition. When it comes to diet and nutrition there are two important things to be aware of and that is the intake of Macro-Nutritients and Micro-Nutrients. Macro-Nutrients are the carbs, fats, and proteins that are required to sustain life. Micro-Nutrients include vitamins, minerals, and amino acids. <i>Understanding the need for Proper Recovery and Sleep:</i> Of course every person’s need for sleep varies, however, studies show that our minds and bodies need an average of 7-8 hours of sleep per night. And it’s important to get sound sleep where you go through multiple rem cycles. So, knowing your physical limitations or when your body needs to recover by developing a mind-body connection will prevent overexertion, injury, or exhaustion. <b><h1>3. Social Wellness</b></h1> Social Wellness refers to one's ability to interact with people around them. It involves using good communications skills, having meaningful relationships, respecting yourself and others, and creating a support system that includes family members and friends. Social wellness can be a tricky topic for some people because, and maybe this applies to you, but people who tend to be introverts or shy around others automatically think that they lack social wellness. This is not always the case though. Some common misconceptions about social wellness are that most introverts have a lower social intelligence than extroverts and vice versa. Introverts or individuals who consider themselves to be shy are typically shy around people they are not close with or maybe have just met. These people usually have a close group of friends or family that they are comfortable with. So to them, this is considered a safe space for them to truly be themselves and can showcase healthy social Intelligence. If you look past the social shyness many of these individuals have the skills needed to maintain a healthy social life. It’s also important to note that being considered an extrovert does not automatically mean you have developed great social wellness and there is nothing you need to improve on. <b><h1>4. Occupational Wellness</b></h1> Occupational Wellness is the ability to achieve a balance between work and leisure time, addressing workplace stress as well as building relationships with co-workers. Not only that but it also focuses on our search for a calling and involves exploring various career options and finding where you fit. <b><h1>5. Financial Wellness</b></h1> Financial Wellness is finding satisfaction with your current and future financial situations. It also consists of developing a healthy relationship with the mental aspects of money. This could mean that you understand the need for developing some sort of budget and have the ability to stick to it. Alongside budgeting, avoiding debt and having a strategy to get yourself out of debt is just as important. Surprisingly, assessing your own financial situation is not the only aspect to developing a positive relationship with money. Being financially generous and understanding the importance of giving back develops brings emotional satisfaction to how you spend your money. Finding a cause you are passionate about and doing your what you can financially to contribute is a sign of positive financial wellness (aka the act of selflessness). <b><h1>6. Environmental Wellness</b></h1> This doesn’t necessarily mean that in order to have healthy environmental wellness you need to protect the environment in the stereotypical way you might think. Environmental wellness is creating pleasant, stimulating environments that support well-being. This can look very different from person to person. For example, Imagine a place where you feel the most calm and relaxed. A space that helps you stay productive, focused, and happy. Now for some of you this might be sitting on a park bench with your dog people-watching. For others it could be working on your vinyasa in yoga class. Or if you’re like me, it’s sitting in a freshly cleaned home with the lights dimmed, scented candles lit, a glass of red wine, and good book in my hand. To ensure productivity and that your energy matches your environment, understand what you want to accomplish is important before creating an environment. If you want to crush a killer workout you wont be able to do that in a dim apartment with a glass of wine. You’ll probably desire a completely different environment in order to feel like you’ve accomplished that goal. I know plenty of people who have their best workouts in a run-down gym with no air conditioning, old equipment, and music blasting louder than you can hear the weights clinking against each other. That type of environment stimulates the indivual in a particular way that changes their experience, Now, that might be workout heaven for some and it could sound terrible to others. You might be the type that enjoys working out in a newer, clean gym with quality amenities and all the latest workout equipment, maybe with some subtle music playing in the background so that it doesn’t overpower the music on your headphones. Now, if this is you then you are more likely going to have a better workout in that type of gym than if you were working out in the other gym. Every scenario will be different but making a conscious effort to make these identifications ahead of time will significantly change your experiences in the future. <b><h1>7. Spritual Wellness</b></h1> It’s important to note here that Spiritual Wellness is a personal matter involving values and beliefs that provide a sense of purpose in our lives. While different individuals may have different views of what spiritualism is, it is generally considered to be the search for meaning and purpose in human existence, leading one to strive for a state of harmony with oneself and others while working to balance inner needs with the rest of the world. A few examples of how people can practice spirituality can be through meditation, prayer, affirmations, yoga and meditation, or specific spiritual practices that support your connection to a higher power or belief system. In other words, practicing an organized religion. <b><h1>8. Intellectual Wellness</b></h1> Intellectual Wellness is recognizing creative abilities and finding ways to expand your knowledge and skills. This promotes the exploration of generating new ideas as well as the desire to learn. Being intellectual well creates a stimulating life and develops healthy challenges so we can grow as individuals.  |

| body |  Nothing pairs with a cold autumn day better than a hot bowl of chili, amiright?! I mean, why else would they call it chili?! This unbelievably warm and comforting Sweet Potato Turkey Chili will definitely keep you feeling full and cozy, especially with some cornbread! *drool  As a personal trainer and former fitness competitor, chili has always been one of those "eyebrow raise" foods because of never knowing how much you're actually eating. When you're talkin' carbs, fats, proteins, and not to mention serving size (because don't lie... we all over eat chili!), who the hell knows how long you'll have to march that little booty on the stair master for to burn off the extra "comfort". So I created a chili that slightly healthier than usual and is also macro friendly!  I've broken down the macros for this chili based on a serving size of 1 cup. This recipe yields 8-10 servings at 1 cup per serving. This chili takes under 40 minutes from prep to finish. This chili tastes incredible with a side of warm cornbread crumbled along the top. As much as I would love for these Macros to include the cornbread, sadly, they don’t. But that doesn’t mean you can’t spare a few extra calories for it anyways! 😄 I also enjoy topping my chili off with some avocado, so I've calculated the macros for that as well! I hope you all enjoy this recipe as much as I do! Comment below if you've tried it out! xo, Liz   INGREDIENTS 1-1/2 lbs ground turkey 2 large sweet potatoes, peeled and cut into 1/2 in cubes 2 large sweet peppers, cored and diced (I like green and yellow) 1 large yellow onion, finely diced 4 garlic cloves, minced 2 tablespoons olive oil 1 can (14 oz) black beans, drained and rinsed 1 can (14 oz) whole kernel corn, drained 1 can (30 oz) diced tomatoes 2 cups tomato sauce 1 tablespoon ground cumin 1 tablespoon chili powder Salt and pepper to taste INSTRUCTIONS In a medium saucepan, brown ground turkey at medium-high heat until meat is no longer pink. Set aside. In a large pot, saute sweet potatoes, peppers, onion, and garlic in oil at medium-high heat until vegetables are soft and tender stirring frequently, about 10 minutes. Stir beans, corn, tomatoes, sauce, cumin, chili powder, and browned turkey into sweet potato mixture. Stir over medium-high heat until chili is heated through and the sweet potatoes can be pierced with a fork. Season chili with salt and pepper and serve warm MACROS Serving size 1 cup Calories: 260 kcal Fat: 8g Carbs: 29g Protein: 18g Fiber: 6g Add 1/2 avocado for topping Calories: 320 kcal Fat: 14g Carbs: 32g Protein: 20g Fiber: 9g  |

| body |  Happy Thanksgiving everyone! I am FINALLY sharing my Grandma's delicious pie crust recipe and the apple pie filling i've been trying to perfect for YEARS! If you like an apple pie with a creamy pie filling and a flakey and buttery crust then this will be the recipe you'll use year after year! I will be posting the crust in a separate blog post as well because you can use this crust for any pie! I wish I had more photos for you guys but Thanksgiving time is usually hectic so photographing the process was the least of my worries! I'll bake it again soon and upload more photos documenting the progress. The whole process from start to oven probably takes about and hour and a half if you include the time it takes to peel, core and slice the apples. So, i hope you guys enjoy it! xo Liz  Ingredients for Grandma Derushia's Flakey and Buttery Pie Crust (Makes 2 single shells) 2 cups flour 1 cup shortening 1/2 tsp salt 5 tbsp cold water 1 egg (lightly beaten) 1 tsp white vinegar 1) Mix first 3 ingredients - cut in shortening with a pastry cutter 2) Blend together water, egg, and vinegar 3) Add to flour and mix until it forms into a large ball 4) Split dough into two equal balls 5) Wrap in plastic wrap and chill for 30 minutes 6) Roll one dough ball and press into pie pan 7) Poke a few holes at the bottom of the pan with a fork for ventilation Ingredients for Pie Filling 6-7 Golden Delicious Apples (Peeled, Cored, Sliced into Cubes) 1 stick butter 3 tbsp all-purpose flour 1/4 cup water 1/2 cup white sugar 1/2 cup brown sugar 1 tbsp cinnamon 1/4 tsp nutmeg 1 tsp vanilla Ingredients for Cinnamon Crumble Topping 1/2 cup dark brown sugar 1 teaspoon ground cinnamon 3/4 cup all-purpose flour 3/4 cup chopped walnuts 1/3 cup unsalted butter 1/8 cup filling reserve 1) Place the peeled, cored, and sliced apples in a large bowl. Set aside. 2) Preheat oven to 425F. 3) In a medium sauce pan, melt butter over medium heat. Add the 3 tbsp of flour and mix well, forming a paste. Add the water, sugars, cinnamon, nutmeg, and vanilla and mix well. Bring to a boil for 1 minute, then reduce heat to a simmer for an additional minute. 4) Remove from heat and reserve about 1/3 cup of filling for pie crust and crumble topping. Add remaining filling to apples. Toss well. 5) Pour apples into prepared pie crust, mounding slightly. Prepare Crumble Topping: 1) In a medium bowl, combine the brown sugar, cinnamon, flour, and walnuts. 2) Cube the cold butter and cut into the mixture using a pastry cutter/ dough blender 3) Once full mixed and butter is blended, add 1/8 cup of the pill filling reserve (you should still have about 1 cup remaining) The crumble topping will be thick and crumbly. 4) Sprinkle over the sliced apples Assembling the Pie: 1) Roll the second ball of dough and create a lattice over the top of the apples and crumble topping. (You can do whatever creative design you'd like at this point) 2)Use a pastry brush and brush the top of the lattice and the crust with the reserve pie filling (blends easier when warm) 3) Cover the pie loosely with aluminum foil. I lightly spray the foil so it does not stick to the pie. 4) Place the pie on top of a cookie sheet (to catch any drips) and bake at 425F for 20 minutes 4) Reduce the heat to 350F and bake for another 50 minutes (remove the foil the last 10 minutes to let the crust brown), or until done. The pie is done when the crust is golden-brown and the apples are soft when pierced with a fork. 7). Allow the pie to cool before serving Prep Time: 1.5 hours Total Time: 3 Hours Serves: 8-10 people. |
