| body | 3d/2n Phuket travel itinerary Of all the books in d world, the best stories are found between the pages of passport.. Lets start with the phuket dairies..there are many funsies things to do here.and best travel for it is 3 days n 2 nights.more than that can be tiresome. After landing at Phuket International Airport, outside of the terminal, there are couples of taxi/minibus service counters . The minibus which is also called a van will gather passengers together and drop them off respectively on the way based on where the passengers want to go. Flat fare is 180-200 bath per person depending on the distance. Best ways of selecting accommodations are stay in the hotel which is near to the beach, we stayed near patong beach..The main reason was many places were near by from here and the beach was just 5min walk from our hotel. I noticed on every walking road at some distance this mark was there . Different types of animals drawn like octopus fish, shells ..thought worth taking this pic.  Taxi rip-offs in Phuket are pretty infamous so we hired a scooter having rental fee of 200-250 baht per day. The pic clicked while driving for the beach.  Day1:Island hoping Admire Phuket's pristine landscape ...We started our own tour from karon beach exploring the beach by walking on white shinny sand ..n clicking selfies...then headed towards Kata beach same here exploring it.That’s one of the funsies to do in Phuket – bring extra towels from the hotel and go see different beaches. Find a favorite one to stay for a couple of hours to read, swim, listen to the ocean, sip some tropical drinks or even take a nap on the beach. karon beach  ![DSC_0058.JPG] (https://steemitimages.com/DQmT9kQ6C56tfwmcWT4BZ9JVh9iZJiGWDBBeJjYpKiSxtsb/DSC_0058.JPG) We went to karon view point..enjoyed our quality time there ,it was astounding view from here n too much silence.  Then moved more further n last visit for the day to Promthep-cape..coming here was a bit tiring because of sun-rays and even too hectic being to all places together,but once we reached the view was alluring. We took a shade n sat for around an hour.Perceiving the beauty of this place..  Well, then after a ride of about 1 hr we came back to our hotel, took rest for sometime n then ready for exploring the night life.. When the sun sets, Bangla Road, Patong beach’s craziest party zone becomes closed to traffic and ready for action. All I can say is that the craziness is beyond our imagination. This pedestrian road at night is packed with bars, restaurants, clubs, go-go bars, disco and shops. Soi Bangla is the reason for Patong Beach being so famous! On Bangla Road – an absolute hub of nightlife in Phuket Day 2: Phuket to Koh Phi-Phi . In morning around 7:00 am, the van was there,which brought us to ferry for Koh Phi-Phi..There is no other alternative way to reach there. it charged us around 2600 baht (per couple) the two way ferry. 1st we went to Maya bay got 30mins for swimming seating and clicking the pictures. Swimming here was diverting..The water was pure blue and clean cant get off from it..And love the sand here!! Time for Phi-Phi island!!! We had our lunch there and they gave us about an hour n 30mins to explore it.couldn't swim here so just roamed there. From here we headed to Pileh Lagoon..That took around 20 25mins and we were gazing at the beauty of the outside view from our boat. Swimming and Snorkeling at Pileh lagoon This was quite big at one side we were swimming and the other was for snorkeling..had fresh fruits and drinks here.Hell lot of pics were taken. Time for back to Phuket In about 30 40mins, we were back to Phuket.. We reached our hotel n had time for having sun-kissed..The rays of sun before it set. We sat there for more than an hour and saw every sec of sun set..Adoring it ,how the light covers up by moon.. That night was awesome out there. and then early morning walk at the beach saying our last bye-bye to Phuket waters.. We went to the phuket international airport.Keeping a tick to the bucket list..PHUKET-DAIRIES.. |

I love a healthy salad or diet food on weekdays, but on the weekends, yaayy💃😎 !! i want salty, comforting food without worrying for those extra kilos. And well, hitting the gym is also a routine of our weekend to balance those extras we gained. A vegan recipe blog without a burrito recipe has not been unnoticed by many of you.Plus, if I'm not mistaken, its the only cuisine that actually makes the beans tastes yumm. No matter your dietary needs, preferred flavor profile or spice tolerance,there's a BURRITO out there for you, and the recipes are so customizable that its easy to make any adjustments.I created a deconstructed burrito bowl so that you can build your bowl as you please.Just as if you were ordering your toppings in front of a counter.I love how colorful these bowls are — the bright red tomatoes, the green avocado, the yellow roasted corn and the pop of green from the cilantro. The spinach-lettuce, peppers filling is packed with healthy ingredients, but the ooey-gooey cheese is what makes it a whole meal combo. Layers of fresh ingredients and spices packed with rice, beans, vegetables and a melange of flavors.It encompasses so many different textures typical of a burrito!! The ingredient list may seem long, and several components to be made, but the ingredients are fresh and easily available, making it very simple to prepare the components in advance. **INGREDIENTS** 1. For the Spicy Red Beans & Corn Layer 1.5 cups boiled red beans 1 cup of boiled corn ½ tsp chipotle pepper powder ½ tsp dried oregano or a tbsp fresh oregano 2 tbsp chopped cilantro 1 tbsp ketchup salt to taste 2. For the roasted veggies 1/2 red/orange & 1/2 yellow bell pepper thinly sliced 1 green bell pepper thinly sliced 1/2 cup broccoli chopped ½ tsp chipotle pepper powder ½ tsp dried oregano or a tbsp fresh oregano salt to taste 3. Layer of Raw veges 1/2 cup Spinach 1/2 cup Cabbage & 1 cup Lettuce 4. Rice Steamed rice 1 tsp squeezed lemon 4 tbsp chopped cilantro 5.For the guacamole 1 ripe avocado 1 small tomato finely chopped ½ jalapeno or hot chili, finely chopped ½ tsp ground cumin black pepper and salt 2 tsp or more lemon juice 6. For the pico de gallo 2 medium tomatoes, finely chopped ¼ cup chopped cilantro ½ jalapeno or hot chili, finely chopped 1 tsp or more fresh lime juice or lemon juice ¼ tsp salt Well, pico de gallo is a mexican dish which is also known as salsa topping. 7. Cheese Blend Or Sour cream Blends of cheese mozzarella, cheddar and Parmesan. Even can use sour cream for those who avoid eating cheesy, like me 😜 INSTRUCTIONS Begin with cooking of rice. You can use any rice of your choice, i used white rice. Heat a pan, add olive oil and continue with adding salt, cilantro and lemon juice and stir the steamed rice for about 2 3 mins. Once u are ready with the rice, take it to a different bowl and again add olive oil saute 1st layer of red beans and corn. Keep it in a bowl. Adding on,with olive oil for this time saute roasted veges, don't cook so much that it looses its crispness. Now the time for Our Raw veges, no need to add oilve oil here, just use the same pan as for cooking all these other veges, add spinach cabbage and lettuce sprinkle salt and black pepper and oregano powder and stir it for just 1-2 mins. Now Take a bowl,in the center keep Cilantro lime rice on it add 1st layer of beans n corns, then 2nd layer of roasted veggies, then add with the 3rd layer of raw veggies. and in total, it makes 4 layers now its the time for some spicy sauce toppings, 1st guacamole, then salsa dip (pico de gallo) and last serve with the 7th dip of cheese blends, Well for me i would prefer homemade sour cream dip and serve it with just a nicely chopped purple cabbage to give it a delicious look and taste. |

| body | Raisin Oatmeal Cookies are the morning pick-me-up you need to see you through to lunch. I’m finding myself getting up super early these days. There’s just something about that early morning quiet that speaks to my soul. My husband go for his work and so I can putter around the kitchen, baking up goodies and making my to-do list for the day. My cooking escapades brings the idea for these oatmeal cookies. Just a couple of nibbles of one of my favorite flavor combinations and I am on fire once again, ready to bake some more, play some more, or write a few blog post. Recipe for RAISIN OATMEAL COOKIES 1/2 cup- ghee / unsalted butter 2/3 cup (125gm)- sugar 1 teaspoon- baking soda 1/2 teaspoon vanilla extract 3/4 cup (95 grams) all-purpose flour 1 1/2 cups (120 grams) rolled oats 3/4 cup (120 grams) raisins 1/2 cup walnuts chopped (optional) In a large bowl, cream together the butter/ghee, sugar and vanilla until smooth. In a separate bowl, whisk the flour, baking soda together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them. After stirring it will get thick batter so then you can scoop it and keep on a baking tray. and pre-heat the oven to 350°F (175°C) before you scoop the cookies so that it’s fully heated when you’re ready to put them in. The cookies should be kept apart so it can be baked properly. keep for 150° for 20 minutes.Taking them out when golden at the edges but still a little under cooked-looking on top. You are all set to have these healthy,chewy,thick and delicious raisins oatmeal cookies. |

| body | Fusion of Frankie and tacos.. I call it Veggie Wraps.. Tired of eating same old Frankie or tacos?? ..Then here is the perfect dish u need to try the yumilicious Veggie Wraps..It is toothsome, and accessible to cook..And best is for all foodie who are Jain and crave for vegetarian food. this Jain dish will make you quit having onions garlic.. **Recipe:** For dough: 1 cup of all purpose flour(maida) 1/2 cup of water 1 tbsp curd pinch of salt For the filling: 1\2 bowl of kidney beans(rajma) 1\2 capsicum 2 tomatoes 1/2 small bowl of tomato ketch up ginger and green chili oregano and chili flakes salt according to taste pinch of ground cumin butter cheese **METHOD:** *Step 1*: dough making Combine the flour and salt in a large bowl and make a well in the centre.Add curd and follow with water ,use your hands to bring the dough together in the bowl.Brush a bowl lightly with ghee. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic.Cover with dish and set aside in a warm, drought-free place. *Step 2:* Keep kidney beans in a Luke warm water for about an hour. Transfer it to the pressure cooker and allow for 10 12 whistles or until the beans are soft and edible.Keep in a dish where access water can come out. *Step 3:*Heat butter in a large frying pan on high.Stir in ginger and green chili and for people who are not Jain can add garlic and onions too.Followed by adding kidney beans once the above ingredients turns reddish.(1-2 min). Add chopped capsicum and tomatoes stir it then add ketch up.At last add salt,cumin,oregano and chili flakes..Let gently cook for several minutes while you are preparing the Indian bread or roti.The gravy has to be thick and let it cool. *Step 4:* Now make small to medium balls of the dough. roll the balls in the palms of your hands.flatten the ball.sprinkle some flour to the dough ball.Turn on the gas stove and put the tawa to make it hot. The tawa has to be sufficiently hot to make the wraps. While tawa is getting hot, start rolling the dough ball into a flat round circle,keep on rolling till you get a circle.Now add our mixture of beans as shown in a pic..and with the help of a knife cut the edges as shown.  Even can add cheese over the top of our filling. Fold it, alternatively one side ends at the other side.  now keep this on a hot Pan. Apply ghee all over it turn both sides. and let all the sides get proper heat. then bring it down and keep in a dish and here our Veggie wraps are ready.  Before serving you can even sprinkle cheese on the wraps and green and purple cabbage covering the serving dish.and serve it with red sauce white sauce or for Indians can be all time favourite coriander chutney. |
