      "body": "These twin golden towers are on the west side of downtown Calgary; they were completed in 1983 as part of one of the many oil booms that Alberta experiences. They were originally owned by Husky Oil and marked as such at the top of the towers; since then, Husky was taken over by another energy company called Cenovus and then sold, as they didn't need the extra office space. Since then, they have been renamed Western Canadian Place. I ahve looked at them for much of my life as part of the skyline and thought it was time to take a bit of an adventure inside.\n\nThe first thing you see going in the main entrance is the garden on the lobby level with some interesting Indigenous artwork. I wanted to take a tour of the Plus 15s, so this made for a good starting point. The Plus 15s are a series of bridges and passageways on the 2nd level throughout downtown Calgary that lead from one end to the other. It is meant to make downtown more walkable in the winter, and I was really curious to see what I would find. The first leg headed west took me to a long walkway where there were a dozen painted cow sculptures that looked like part of a larger project.       "body": "Sometimes I like to take photos that give a glimpse behind the scenes. In Edinburgh, too, I often ventured off the beaten tourist track. This was also the case on my first evening, when I was on my way back to the hotel. I really enjoy taking advantage of such opportunities to snap a few photos. As Sunday is a free day for the majority of people in Poland, I usually prepare something tasty. My choice today was pork neck chops served together with braised sauerkraut with roux (a mixture of flour and fat fried together to make food more filling and hearty—used pretty often in traditional Polish cuisine). It’s a traditional dish we make pretty frequently in Poland, especially during free days and family meetings.\n\nPork shoulder is a fatty and well-marbled meat that is also juicy and tender after frying or cooking. Its flavor is intense, aromatic, and kind of fatty. That’s why it’s typically supported with garlic and herbs.\n\nTo prepare this dish for 2 people, you’ll need:\n\nFor the meat:\n• 2 pieces of raw pork neck\n• salt, pepper, fresh garlic—I don't give quantities here, because it's up to your taste how much you'll use\n\nFor the coating: • 2 eggs • all-purpose flour • breadcrumbs\n\nFor the sauerkraut: • 500 g of sauerkraut • 2 small carrots or 1 medium carrot • 200 g of onion • about 400 ml of water • 3 tablespoons of frying oil • 1.5 tablespoons of all-purpose flour • salt, pepper, 1–2 bay leaves, 1 tablespoon of sugar or honey • 3–4 allspice berries\n\nFor mashed potatoes: • 500 g of potatoes • Some dill herb - chopped • 1 tablespoon of cream or yogurt\n\nFirst, drain the sauerkraut by placing it in a colander, then chop it. Place it in a pot. Grate the carrot on the coarse side of a grater and add it to the sauerkraut. Now, add salt, pepper, 1–2 bay leaves, 1 tablespoon of sugar (or honey), and 3-4 allspice berries. Pour the water into the pot and place it over low heat, covered. When the water comes to a boil, start timing the cooking. It should take 30–40 minutes.",
