bodyI am having a Mediterranean food moment right now and aubergine is( definitely on my weekly shopping list. These little rolls are fairly easy to execute and super versatile. These little gems are perfect as an appetizer, side dish or even lukewarm on top of a mixed green salad if you're looking for a light summer dinner. Perfect for our current sweltering hot weather. ![P1010487.JPG](https://steemitimages.com/DQmb3Y6weXzNQiPMBUjQa3qd497J9rFm3YKpfgaGnmww4Xm/P1010487.JPG) **Ingredients** - 1 aubergine, sliced 1/4 inch lengthwise - 6 Roma tomatoes, halved and seeded - 1 chèvre (goat cheese) log, cut into 1/2 inch slices - Herbes de Provence - 3 tbsp fresh basil, slivered - Salt, pepper - Olive oil **Instructions** 1. Preheat oven to 300F 1. Place the tomatoes skin side down on a cookie sheet, drizzle with 1-2 tbsp olive oil, season with salt, pepper and herbes de 1. Provence. Put in oven for 20-25 minutes or until the skin is slightly golden brown and set aside to cool. 1. Meanwhile, season the aubergine slices with salt, and pepper and drizzle with a 3-4 tbsp olive oil 1. Move the slices around making sure they don't stick to the grill. After 5-10 minutes, when one side starts getting charred grill marks, flip them. Cook for another 2-3 minutes and reserve on a plate to cool. 1. On a wooden board, take a slice of aubergine and in the middle, place a slice of cheese, a sprinkle of herbes de Provence and a half tomato. Roll up the aubergine and stick a toothpick in to keep it together. Repeat until there are no more aubergines. 1. Place the rolls on a slightly oiled cookie sheet. Drizzle with 2 tbsp olive oil and put under the oven grill until the cheese melts, roughly 5-7 minutes 1. Top with basil and serve hot or lukewarm

      "body": "I am having a Mediterranean food moment right now and aubergine is( definitely on my weekly shopping list. These little rolls are fairly easy to execute and super versatile. These little gems are perfect as an appetizer, side dish or even lukewarm on top of a mixed green salad if you're looking for a light summer dinner. Perfect for our current sweltering hot weather.\n\n![P1010487.JPG](https://steemitimages.com/DQmb3Y6weXzNQiPMBUjQa3qd497J9rFm3YKpfgaGnmww4Xm/P1010487.JPG)\n\n**Ingredients**\n\n- 1 aubergine, sliced 1/4 inch lengthwise\n- 6 Roma tomatoes, halved and seeded\n- 1 chèvre (goat cheese) log, cut into 1/2 inch slices\n- Herbes de Provence\n- 3 tbsp fresh basil, slivered\n- Salt, pepper\n- Olive oil\n\n**Instructions**\n\n1. Preheat oven to 300F\n1. Place the tomatoes skin side down on a cookie sheet, drizzle with 1-2 tbsp olive oil, season with salt, pepper and herbes de 1. Provence. Put in oven for 20-25 minutes or until the skin is slightly golden brown and set aside to cool.\n1. Meanwhile, season the aubergine slices with salt, and pepper and drizzle with a 3-4 tbsp olive oil\n1. Move the slices around making sure they don't stick to the grill. After 5-10 minutes, when one side starts getting charred grill marks, flip them. Cook for another 2-3 minutes and reserve on a plate to cool.\n1. On a wooden board, take a slice of aubergine and in the middle, place a slice of cheese, a sprinkle of herbes de Provence and a half tomato. Roll up the aubergine and stick a toothpick in to keep it together. Repeat until there are no more aubergines.\n1. Place the rolls on a slightly oiled cookie sheet. Drizzle with 2 tbsp olive oil and put under the oven grill until the cheese melts, roughly 5-7 minutes\n1. Top with basil and serve hot or lukewarm",

bodyCrêpes are a thing at our house. Not sure how this family tradition started but I've been making these large thin French pancakes for the kiddos almost every morning for the past 6 years...which means I could probably rival the crepe street vendors in Paris at this point. ![P1010417.JPG](https://steemitimages.com/DQmVcS9YZVRGV5R7pgMGeu1crAwGBkq98dtfCZdnkWbZHWJ/P1010417.JPG) I have to say, no matter how tired or in a hurry I am, I always put a lot love into making them because my kids ADORE them. You can omit the orange blossom water and you'll get great classic crêpes. I always add it though because it brings them to another level of delicious where you don't even need to add anything on them. My kids either have them "nature", straight off the pan or with a smear of Nutella. My husband likes dusting them with sugar and adding a squeeze of  lemon before he rolls 'em up. Careful, they'll be gone faster than you can make them. Note : Getting the texture right depends a lot on the flour you use as well as the quantity of milk. You need to make sure the batter is quite liquid - probably more than you think - somewhat like drinkable yogurt. I've given an indication of the quantity of milk but feel free to adjust until you get the right texture. Other note : This is probably one of the only recipes on my site where you will see sugar as an ingredient - I have tried substituting it for something else but my kids always notice a "funny taste" so I've left it. Makes 6 9-inch crêpes **Ingredients** * 1 cup Bob Redmill's gluten free flour (I have tried other gluten free ones and they've been horrible...if you don't mind gluten, just use normal flour) * 1 egg * 1 1/4 cups milk * 1/4 cup of melted butter (ghee also works) * 1 tbsp sugar * a pinch salt * 1 tsp vanilla * 1 tbsp orange blossom water **Instructions** 1. Put the flour in a big bowl and break in the egg 1. On one side of the bowl, start whisking the egg and half the flour (not all otherwise you will get a crumbly mixture) until it turns into a smooth paste 1. Gradually add some milk on that side of the bowl, the paste will become more liquid. Gradually incorporate some of the non-mixed flour and always make sure you have a smooth paste before you add more milk. Add more milk, again incorporate more flour until the mixture is smooth and so on until you have no more milk or flour left. 1. Add vanilla, orange blossom water, sugar, melted butter and beat thoroughly. 1. Let rest for an hour - and up to 12 if using gluten free flour or up to 24 if using regular flour 1. Take a non-stick 9-inch pan and put on medium high heat 1. Take a laddle of the crêpe batter and pour it into the pan, turning the pan up, down and sideways really quickly to cover it with the batter. The crêpe shouldn't be more than a few millimeters thick. 1. Once the sides start browning slightly, loosen all sides making sure it doesn't stick anywhere and then flip it 1. Repeat until you have no more batter

Since, I've tried my hand at making "clean" ones at home, but they've always tasted too healthy for the kids to like them - if that makes sense. Finally, my quest has stopped with these that I've adapted from Ohsheglows.com. They really hit the spot with a big mug of tea or coffee when you are in the mood for something sweet. ![OMG-toffee-granola-bars.png](https://steemitimages.com/DQmf3WNEvrZxGRytAVXrRvrPAAy7H2DwCStxzNG1gQrmJ3H/OMG-toffee-granola-bars.png) Makes 12 bars **Ingredients** * 1 1/2 cup of oatmeal (I use gluten free) * 1/4 cup of whole spelt flour (you could use gluten free as well mixed with a tsp of milled flax seed) * 1/2 tsp salt * 2 tsp chia seeds * 1 tsp cinnamon * 1 cup of mixed raw almonds, cashews and pecans * 1/3 cup of dried apricots or cranberries  (you could use some dark chocolate here....) * 2 tbsp unsweetened dried shredded coconut * 1/2 cup of brown rice syrup * 1/4 cup of coconut nectar * 1/4 smooth unsweetened peanut butter * 2 tbsp coconut oil **Instructions** 1. Preheat oven to 300F 1. Line a 9-inch square pan with parchment paper (please don't attempt without parchment paper -it will all get stuck to the bottom) 1. Mix all the dry ingredients in a big bowl 1. In a smaller bowl, put the rice syrup, coconut nectar and peanut butter. Heat them in the microwave for 45 seconds and mix thoroughly. 1. Add liquid mixture to the dry ingredients and mix 1. Pour the granola bar mixture into the pan and with a wet spoon (wetting the spoon prevents it from sticking to the syrupy granola), flatten it so that it has even thickness throughout 1. Place in the oven for 25-30 minutes, until they turn into a golden caramel color 1. Take out of oven and let cool for 20 minutes. bodyIn sports science, there is a concept called the SAID principle, which stands for Specific Adaptation to Imposed Demand. It basically means that your body gets better at what you make it practice. So if you are always doing the same sport, your nervous system will adapt itself and create the synaptic connections required to become better at that sport. This is why we are how we move. So if you are like me and want your body to feel and look balanced - you should move in ways that contribute to that. When do we lose balance? As children in the 80s, apart from the TV and Atari, we didn't have many "couch potato" pass times. We climbed trees, rode our bikes, went on swings, skipped rope, bounced (remember the pogo stick?), and participated in a variety of activities from dodge ball to playing marbles. Our bodies felt balanced. Then came adulthood: we started spending more time indoors studying, working, talking on the phone, sitting, drinking and eating with friends, etc. and the time we did spend outdoors was mostly driving a car. Sure we maybe jogged or played tennis once a week, but that was nothing compared to what we did as children. Remember the SAID principle? We are how we move. So our posture and gait changed, we became less agile and lost some of our youthful flexibility. Then came stress, a busy life, pregnancies, children, duties and our bodies started feeling "old". We decided to workout and eventually got injured. Sound familiar? This obviously isn't the case for everyone, but many of us have lived through a version of this. In my case, I was active...but still managed to lose balance. My version of lost balance In my 20s and early 30s, I ran long distances, did a ton of interval training and was pretty slim. Was I fit? In some ways yes, I was strong and had a lot of endurance. But was I on the path of graceful ageing? Not really - my coordination, body awareness and flexibility - all the things that only worsen with age - were very average. I also had chronic lower back and knee pain. Once again, it's the SAID principle: I worked out the same big muscles over and over in the same ways and the result was lost body balance. Much later, after years of more balanced training, I took a Neuropilates diploma, where I learned that being truly in shape isn't just about gaining muscles, stamina and fitting into a bikini - it's about developing our coordination, proprioception, vestibular (balance) and visual systems as well as achieving good parasympathetic/sympathetic equilibrium. If you work on all these different elements, you will feel, look and age better. How to achieve balance through movement The good news is that no matter where you are at today, you can get your body to a more balanced place. Here are some tips to help you achieve this. 1. Add variety to your workouts If you are doing a sport where you are always using the same muscles in the same ways over and over again, introduce other activities, the nervous system loves novelty. For example, if you're a runner, add some pilates or a zumba class. Today in Dubai, there are so many new gyms and studios popping up every day, I can't even keep up with them anymore. If you need inspiration, go on www.fittpass.com, they offer cheap daily passes to a large number of fitness establishments in the city. (And they offer WellMamma readers the discount code WELLMAMMA so it's even cheaper for you ladies) 2. Do activities that keep your body guessing If you don't have time to workout many times a week or just can't be bothered to organize many different activities, then practice very "complete" sports  like yoga, the Tracy Anderson Method, Parkour, martial arts or dancing where you twist, turn, touch your toes, balance on one leg and more. Not only are they less likely to cause injuries, but they also workout more muscles in a bigger variety of different positions and planes of motion than traditional fitness methods. They are amazing for the brain: you will develop body awareness, balance, hand-eye-foot coordination as well as mindfulness. 3. Add props and use external stimulus Introducing an external element Any sport that has some sort of ball, racket, club or board is great for this. If you do Pilates, try doing a reformer or cadillac class, the effort required by your body will be different. If you work out at the gym, try using the Swiss ball, kettle bells, a foam roller, a medecine ball or other such props to challenge yourself. 4. Move to music Moving to a beat is very beneficial for your brain and motor cortex. Studies even suggest that listening to enjoyable music (even when you are not moving) stimulates electrical activity in regions of the brain that help coordinate movement, including the supplementary motor area, cerebellum, and ventral premotor cortex. 5. Bounce Bouncing and rebounding have become very popular since NASA started using it to help astronauts regain bone and muscle mass after being in space. Like all weight-bearing exercises, it's great for building bone density and a lot of research supports it as one of the most effective ways to activate your lymphatic system. Bouncing also happens to be excellent for your vestibular system. 6. Workout in nature Exercising in natural has many of known psychological benefits, but the main one I want to mention here is that performing a movement in an environment that isn't under your control (a rough terrain, snow, waves, wind, obstacles, etc) gives your nervous system and added challenge. It helps develop your reflexes and coordination.
