      "body": "<html>\n<p>Today I will be talking about the third brew I ever made; an Imperial IPA. Back when I brewed this, is wasn't even a fan of IPA's, and most of the time, I still am not. But they're growing on me. I actually took on brewing an Imperial IPA because a friend of mine likes them, and I wanted to see if I could brew something that he would like.</p>\n<p>Ingrediënts weren't really complex:</p>\n<ul>\n  <li>Golden Promise Pale Malt</li>\n  <li>Cara/Crystal Malt (20EBC)</li>\n  <li>Chocolate Malt</li>\n  <li>Chinook Hops</li>\n  <li>Simcoe Hops</li>\n  <li>Willamette Hops</li>\n  <li>Wyeast 1272 American Ale II</li>\n</ul>\n<p>Yes, I added chocolate malt in there, I honestly don't remember why, it's a really small amount obviously, so I may have used it just a bit to give it a bit more color. Also, it does have a nice sweetness to it that I kind of like, so there's that as well.</p>\n<p>I made a small mistake with this beer, I may have put in a little bit too much of priming sugar, I had some bottles that turned out to be gushers because of it, and it's a bit too carbonated which makes it a bit too foamy. When it was fresh, it was really a hop bomb, and it had a very agressive bitterness, which wasn't apparent immediately, but you'd feel it coming up once the beer was down for a couple of seconds. I loved the hop flavors, the bitterness wasn't really my thing, but the flavor was good, very hoppy, very floral, bit of citrusy, fruity tones.</p>\n<p>I opened a bottle today, about 1.5 year later and it actually still tastes pretty darn good.Most of the bitterness is actually gone, and it's become quite mellow in that regard, but to my surprise, the hop flavour is still very much present. Sure, it's not as hoppy as it used to be, but there's still the citrusy, fruity tones from the hops. It's just a tad sweeter now, since all that bitterness is gone and I actually like it more now than back when it was fresh.</p>\n<p>All in all, I'm quite happy with this beer, I don't think I would brew it again, because it wasn't completely my thing when it was fresh, but I don't regret brewing it.</p>\n</html>",

      "body": "You're making me want one! I recently had a Rauchbier that was very enjoyable. It was a part of my advent series, and excelled because it offered more than just smoke flavors. The malts worked together to provide a very rounded out flavor profile that had complexities and body; much like I'm guessing your brew does.\nI also had a smoked Marzen (last night) that was pitiful. It seemed more like a pilsner they threw some liquid smoke into. The color didn't suggest the base beer should be a Marzen and there was a serious lack of any malt flavors. The ONLY thing I could taste was a gentle, overly sweet mesquite, which is what led me to believe the flavor may not have even been provided by brewing with smoked malt.\n\nThanks for sharing this brew; too bad I can't sample for myself.",

      "body": "<html>\n<p>After I did that Porter kit, I felt like I was ready to go on to my very own recipes. Traditionally, and I notice this a lot when a new Belgian brewery comes out with their first beer, they'll come out with a tripel or some sort of other very basic style... I'm not like that. I try to do something different with all the beers I create, so I wanted to apply that as well to the first beer of my own creation.</p>\n<p>So I settled on doing a rauchbier. It's a style you don't really see all too often in Belgium, but I love the style, and there's lots of different things you can do with it. One thing I particular that I really wanted to do, was to use a small amount of peated malt. Peated malt is often used in smoked stouts or porters, but I hadn't seen it used in a rauchbier that I knew of yet. I also wanted to create more of an amber/ruby red type of beer, so I added some darker malts to the mix as well.</p>\n<p>The complete bill ended looking up like this (and yes, I'm keeping the ratio's a secret):</p>\n<ul>\n  <li>Belgian Pale Malt</li>\n  <li>Smoked Malt</li>\n  <li>Cara/Crystal Malt (20EBC)</li>\n  <li>Peated Smoked Malt</li>\n  <li>Roasted Barley</li>\n  <li>Chocolate Malt</li>\n  <li>Willamette hops</li>\n  <li>Wyeast 1056 American Ale</li>\n</ul>\n<p>I really love how the beer ended up, as far as color goes, it might just be a tad too dark, but if you inspect it closely, you can clearly see it has the dark amber color that I was aiming for. I opened up the bottle below, which is also nearing 2 years of age, today and poured one in a glass to have a taste.</p>\n<p>At first glance, head retention is still top, it laces beautifully against the edges of the glass which I love to see. You are immediately greeted by a warm smokey scent with a little bit of sweetness. Taste is still great as well, it has hints of smoked meat but it is rounded out by a certain sweetness, probably coming from the chocolate malt. The smoked malts and roasted barley play perfectly together as well, in the end you'll have a bit of both worlds, the lovely smokeyness from both smoked malts, but it also as a bit of that roasty character you'd expect from a stout.</p>\n<p>All in all, I am very happy with this beer.       "body": "yeah, I think I did like 2 kits maybe, and then made the transition to all-grain. It was indeed just some canned concentrated malt, and all you had to do was add some water and yeast and let it ferment.\n\nNot very satisfying really. This all-grain kit ended up being a good beer, but, with trying to sound arrogant, my first own recipe I brewed after that already blew it out of the water and so did everything else I brewed.",

      "body": "I did a couple kits...and they were horrid. Or maybe that's just how kit beer tastes, I don't know. I think the problem was that mine had no grain; it was all canned/liquid LME. \n\nI immediately made the jump to all-grain after that. I like to have control over my beer. :)",

      "body": "I'd never done a pre-packed kit before. I actually learned brewing all-grain with a buddy that has a full setup and vividly remember my first brew as well. I did custom extract/grain brews at home after that, since the local brew store sells a few malt extracts to save you some work.\n\nLately, with the current age of my kids and this busy stage of life, I haven't been doing any home brewing. I actually started a super basic mead recipe at the start of this month just for to have something fermenting to look forward to. I'm looking forward to when it's ready for bottling, which will probably be the beginning of February.",
