| body | Fried Rice – Rice is a carbohydrate food that is loved by almost everyone both big and small. It is a food eaten mainly by children and ladies who are trying to top their games. They understand what am saying. Rice is a very acceptable meal in the society at large. fried rice It is very easy to digest and convenient to carry or eat in any location or ceremony. It has different preparations and we would be discussing the fried rice. Fried Rice Ingredients Fried rice has a very calming color which creates an eager to be eaten. It makes the world look colorful in the sense that it has various colors in it. The ingredients are The raw rice Groundnut oil The protein (liver, meat, chicken, turkey, etc.). The liver should be diced into small pieces before boiling Seasoning (Maggi and salt) Grinded crayfish and pepper Sliced onion Carrot, green beans, green pepper, spring onions, baked beans, green peas Curry and thyme Water To prepare the fried rice you need the tool listed below Cooker, this could be a stove, gas or electric cooker The cooking spoon preferably the wooden spoon Kitchen knife Chopping board Sieve How To Cook Fried Rice There are several methods of preparing fried rice depending on different ethnic groups. Some deliberately fry the rice while others cook. I’ll be taking the most common method which is the boiling method Boil the protein with salt, Maggi, onion, curry, thyme, and little water. Add them in appropriate quantity to give it proper taste Hint: Use any of the methods in bruning. It brings out the taste of the chicken During the above process, you can parboil your rice by first washing in clean cool water before putting in a boiling water on fire. Allow to boil till its almost soft, sieve and keep aside. In an empty pot on fire, add groundnut oil with your sliced onion. Add part of the Grinded pepper, crayfish, green pepper, green beans, green peas, carrot, and spring onions and stir. Add your curry again. Pour in your chicken stock as well as the chicken if it’s not going to be fried and stir. Add the Maggi and salt for taste and water if need be. Pour in your rice and allow to soften by the chicken stock or add water and cover. Leave for 3 minutes and pour in the remaining of the pepper, crayfish green pepper, green beans, green peas, carrot as well as the baked beans to give the rice a fresh taste. Stir properly using the wooden spoon to avoid it burning making sure that the sauce doesn’t stay under the rice. Once dried properly and softened, bring down the rice and serve with the fried chicken and a glass of any favorite drinks.  |

| body | Brunning – Boiling a protein as stockEvery body might think he or she can be able to boil a protein until it’s served and you find out that it’s either extremely tasty or tasteless or very strong. There are different timings to a different protein and there are various ways to prepare this protein as a stock. Brunning You might want to use fish in your food, and we all know how soft fish is, so you don’t use the timing for meat to boil fish. Or else it might burn or become too soft. I know you were expecting me to give you a particular time but you know what I don’t know what you use to cook the food, either gas, stove, or firewood and also it depends on the part of the animal used. Some animal parts are even softer than the fish which is considered to be the softest. So, the harder the part, the longer you boil and the softer the part, the shorter you boil. Just make sure that your meat isn’t raw and strong to eat. There are Two Brunning Method and I’ll like to take you through them. Soak your chicken or turkey particularly in adequate warm water with cubes of knots and leave for 10 minutes. This will enable the chicken to have a better taste during preparation and consumption. You can boil it with the salt, Maggi, onion, and a little water. Or, if you are using anything more or apart from the chicken or turkey, wash the protein in clean water and put in an empty pot, add Maggi, salt, onion. Add curry and thyme if not being used for soup. Add almost no water and turn. Allow it for 5 minutes before boiling. This will make the spice get acquainted with the protein. Hint: when boiling a combination of protein, remember to boil from the hardest to the softest. This I mean is that, if you’re using fish and meat, boil the meat before adding the fish so as not to over boil which might make it too soft than you wanted. | body | Today, I’ll be talking about how to prepare okra soup. People get its spelling and pronunciation wrong. It’s spelt and pronounced ‘okra’ and not ‘okro’. It is one of the most commonly prepared soup in almost all tribes in Nigeria. It is one of the simplest and cheapest soup to prepare. okra soup It requires no serious energy and time except you want to prepare the ones containing enough protein which we would be treating today. Other proteins which could be used are isam(periwinkle), fish, meat, chicken, turkey, canda (kpomo), etc. An average okra soup always takes at 25 minutes. Join me as we unleash this recipe. Ingredients For Making Okra Soup Okra fruit-a sizable quantity. Well diced and pounded Vegetable leaf- either the ugu (pumpkin) or uziza. Sliced properly Grinded red pepper or tatashie Red oil The protein(fish,canda, stock fish, etc) The English seasoning(maggi and salt to taste) The local seasoning (efure and uziza seed) Grinded crayfish sliced onion cold water Tools The tools cannot be forgone in any preparation even if it’s outside the kitchen, so permit me to take you through it. Cooking gas or stove or even our local fire wood method Pot for both the stock and the soup cooking spoon Kitchen knife Chopping board As well as your apron Procedure of making Okra Soup There are two different methods of making the okra soup which is the boiling method or the frying method. Let’s go through it one by one The boiling method Boil your protein starting with the hardest to the softest e.g the canda before adding the fish after washing them in clean water. Season with salt and Maggi and a little water for boiling. At this point, you can wash your stalk fish and add to the boiling pot. Allow for 10-15 minutes In the same pot containing the boiled protein, add your red oil and allow to cool with the sliced onions. Add your Grinded pepper and crayfish together with your pounded uziza and efure seed. Add water to increase the quantity if need be and allow to boil. You can now add your diced okra seed preferably also pound after cutting to reduce the drawing nature and cover the pot immediately to create a better taste of the leaf You are free to add your Maggi and salt if the stock does not containing it in its required quantity. Add the washed and sliced vegetable and cover immediately to also give a better taste of the soup. Your soup is ready and you can serve with tuwo, garri, pounded yam, amala, semovita or even wheat. The frying method Of Making Okra Soup Do the same in the first step This is where the difference is. In another pot instead of the stock pot, fry your red oil with onion, pepper and crayfish. After properly fried you can now add your meat and meat stock into the mixture. If you need to add water together to increase the quantity with the Maggi and salt to taste, it’s at this step Also remember to add your efure and uziza seed. Stir properly to give a palatable taste Add the diced and pounded okra seed and cover as well. Also add the vegetable leaf after allowing the okra to steam with the soup and cover. Leave for 5 -7 minutes. Stir and serve with any of the swallow above. |

"body": "Today, I’ll be talking about how to prepare okra soup. People get its spelling and pronunciation wrong. It’s spelt and pronounced ‘okra’ and not ‘okro’. It is one of the most commonly prepared soup in almost all tribes in Nigeria. It is one of the simplest and cheapest soup to prepare.\n\nokra soup\n\nIt requires no serious energy and time except you want to prepare the ones containing enough protein which we would be treating today. Other proteins which could be used are isam(periwinkle), fish, meat, chicken, turkey, canda (kpomo), etc. An average okra soup always takes at 25 minutes. Join me as we unleash this recipe.\n\nIngredients For Making Okra Soup \nOkra fruit-a sizable quantity. Well diced and pounded\nVegetable leaf- either the ugu (pumpkin) or uziza. Sliced properly\nGrinded red pepper or tatashie\nRed oil\nThe protein(fish,canda, stock fish, etc)\nThe English seasoning(maggi and salt to taste)\nThe local seasoning (efure and uziza seed)\nGrinded crayfish\nsliced onion\ncold water\nTools\n\nThe tools cannot be forgone in any preparation even if it’s outside the kitchen, so permit me to take you through it.\n\nCooking gas or stove or even our local fire wood method\nPot for both the stock and the soup\ncooking spoon\nKitchen knife\nChopping board\nAs well as your apron\nProcedure of making Okra Soup \nThere are two different methods of making the okra soup which is the boiling method or the frying method. Let’s go through it one by one\n\nThe boiling method\n\nBoil your protein starting with the hardest to the softest e.g the canda before adding the fish after washing them in clean water. Season with salt and Maggi and a little water for boiling. At this point, you can wash your stalk fish and add to the boiling pot. Allow for 10-15 minutes\nIn the same pot containing the boiled protein, add your red oil and allow to cool with the sliced onions.\nAdd your Grinded pepper and crayfish together with your pounded uziza and efure seed.\nAdd water to increase the quantity if need be and allow to boil. You can now add your diced okra seed preferably also pound after cutting to reduce the drawing nature and cover the pot immediately to create a better taste of the leaf\nYou are free to add your Maggi and salt if the stock does not containing it in its required quantity.\nAdd the washed and sliced vegetable and cover immediately to also give a better taste of the soup. Your soup is ready and you can serve with tuwo, garri, pounded yam, amala, semovita or even wheat.\nThe frying method Of Making Okra Soup \nDo the same in the first step\nThis is where the difference is. In another pot instead of the stock pot, fry your red oil with onion, pepper and crayfish. After properly fried you can now add your meat and meat stock into the mixture.\nIf you need to add water together to increase the quantity with the Maggi and salt to taste, it’s at this step\nAlso remember to add your efure and uziza seed. Stir properly to give a palatable taste\nAdd the diced and pounded okra seed and cover as well. Also add the vegetable leaf after allowing the okra to steam with the soup and cover. Leave for 5 -7 minutes. Stir and serve with any of the swallow above.",

Measure margarine and butter or either into a mixing bowl and then add your measured sugar and flavor into the same bowl and start creaming using a mixer or by hand using a wooden spoon. Cream sugar, butter/margarine until light fluffy, increased in size and all most white, add flavoring. Make sure to use a clean and dry bowl and beaters or else the whites won’t form peaks. Fold in the whites into the yolk which has been transferred to a larger bowl in bits. Use a spatula and a light hand without stirring to avoid losing the volume of the lighter mixture but rotate your wrist while combining. Add the desiccated coconut at this stage and fold in. Pour in the melted butter down the side of the bowl and fold into the batter until smooth. Add the sieved flour, baking powder, preservative and powdered milk. Sprinkle the salt Fold mix to a batter and pour into a well-greased pan, the pan can be lined with baking paper. Bake in a moderately hot oven, medium gas mark or temperature, slightly hot for about 30-45mins or 1hr, duration will depend on cake size. When the top middle of cake has a bouncy feel, test by dipping in a sharp object like a knife through the middle, if it comes out clean, then its set. Place on a wire rack to cool. Frost as desired. Place one of the sponge cakes made in the pan on a serving plate and spread any flavor of jam overtop and fresh berries. Stack the other sponge cake on top and dust with confectioner’s sugar and serve. |

I made up my mind to at least taste the soup after one of the longer throats. Bitter leaf soup Thanks be to God that my longer throat never failed me, and I’ve been eating it since that day. What a great testimony for a soup. The leaves are never used like that because if it’s bitter taste and if your soup is bitter, you are termed a bad chef. They are washed several times like clothes to remove the bitter taste in form of a foam until the water is flawless and the leaves have no taste of bitterness. Ingredients used for Making Bitter Leaf Soup This is a local soup and as well must have local ingredients to achieve a nice meal. They are: Squeezed bitter leaf – 3 handful Red oil- 2 large cooking spoon Protein- Assorted beef(shaki), assorted fish(Dry fish), chicken parts Uziza and Efure (traditional seasoning) all pounded Seasoning- Cubes and salt Grinded pepper and crayfish Grinded Achi Preparation: How to Prepare Bitter Leaf Soup Please, I’ll like to place an emphasis on the bitter leaf so that no one acts like I did the first time I was about squeezing the leaf. The leaves must not be sliced before washing, it makes the leaf too small to even wash so I’ll prefer that you sundry it for 5 minutes before squeezing for proper washing and for a longer size of leaf. Wash the cuts of bitter leaf in clean water by scrubbing like clothes. Make sure there is no trace of bitterness. Wash it, sieve out the water and wash again with a little clean water until the bitterness is out. In an empty pot, boil your shake with the chicken with cubes, water and salt and leave to become tender for about 15 minutes. The harder proteins are boiled before the softer. You can add your dry fish to steam. In the pot containing the boiled protein and it’s stock, add your grinded pepper and crayfish, pounded Efure and uziza seed. Add your red oil and allow to steam. Stir properly and add your achi in bits while stirring. Add your squeezed bitter leaf into the pot and cover so as to change the taste of the raw leaf as well as your dissolve the achi. You can add water to increase the quantity of the soup if you want. Add your cubes and salt to improve taste.
