Because it is so easy to prepare, you can count on it to save the day when you run out on soup a few days before the big soup day \n\nINGRIEDIENT;\n1.Cat Fish: 4 one-inch thick pieces\n2.Fresh or dry Utazi Leaves (Gongronema latifolium)\n3.Thickener: Raw White Yam / Yam Powder / Potato Puree\n4.Habanero peppers: to taste\n5.Salt (to taste)\n6.1 handful crayfish\n7.1 stock cube (Maggi / Knorr)\n8.1 Ogiri Okpei (Nigerian traditional seasoning)\n![](https://steemitimages.com/DQmNnJ5hobyg7hRbfp7hLsZP2Bmo4KkfU31opAkwdo1vskn/image.png)\n\nBEFORE YOU COOK NSALA SOUP(WHITE SOUP)\n-Cut the catfish into 1 inch thick cylindrical discs and remove the intestines. \n-Place in bowl and pour very hot water on the fish. \n(NOTE)This process of pouring hot water on the fish toughens the skin of the fish so that the pieces do not disintegrate while cooking the soup.\n- Leave for about 2 minutes and wash the fish with cold water.\n You should also wash off any slimy substance on the outer skin of the fish at this time.\n-Boil a few cubes of raw white yam. \n-When soft, pound with a mortar and pestle till a smooth paste is formed, \n-Then set aside. You can substitute white yam with yam powder or potato puree for the thickening.\n-Wash and pound/blend the utazi leaves, the chilli pepper and the crayfish and set aside. \n(NOTE)Utazi is bitter in taste and only used for flavouring so one or two leaves should be enough especially when using the fresh leaves.\n![](https://steemitimages.com/DQmWHg3ZNgsoFxquUnx48oenNR1MvB9gfQ9tR1KVwA3XVVZ/image.png)\n\nCOOKING DIRFECTIONS\n-Place the catfish in a pot and pour enough water to cover the fish.\n- Add the seasoning and cook till done. \n-Feel free to add beef and dry fish to this soup recipe.\n-When the catfish is almost done, add the crayfish, pepper and utazi leaves blend.\n- Also add the yam paste in small lumps and salt to taste.\n(Note): Catfish is what makes Nsala soup what it is, giving it the unique taste that it has so it is essential to this recipe. Oceans of blue,\nColourful rainbows, morning dew,\nTrees of glory displaying leaves of green,\nI see goodness and beauty in all living things.\n\nI hear creatures of darkness prowling the night,\nBut I'm safe in your arms as you hold me real tight,\nI feel the whispers of the wind entring my soul,\nI feel you breathing, that makes me whole.\n\nI hear the rain falling, and the sun on my face,\nI feel the shadows of darkness as me you embrace,\nI feel happiness and laughter tears and sorrow,\nBut without you my love there would be no tomorrow.\n\nI feel thunder and lightning, whenever you're near,\nI feel whispers of love wind brings to my ear,\nBut of all of the things that nature may bring,\nIt's your love I cherish above everything.",
