bodyI haven't tried making a sourdough with coconut flour, but it could just work. Then you could remove vinegar and baking powder from the recipe. I sometimes bake a gluten free sourdough bread. Nice recipe, still :)

When they’re in season I try to overindulge on them to get me to the point of being able to bare the long wait in-between seasons. This salad is worth all the effort as the dressing is OUT OF THIS WORLD, and the whole salad of figs, chicken and mozzarella just sings a sweet sweet spiced song that will have you coming back for more and more! **Ingredients** 4 x 200g chicken breast fillets (skin on) 1 tablespoon olive oil 2 buffalo mozzarella balls or 6 bocconcini, torn into bite-sized pieces 4 prosciutto slices, torn 2 cups rocket leaves Spiced figs 1 cup (220g) caster sugar 1½ cups (375ml) dry red wine ½ cup (125ml) balsamic vinegar 1 cinnamon quill 6 cardamom pods 6 peppercorns 2 star anise 2cm piece ginger, thinly sliced 4 lemon slices 8 fresh figs **Method** **01** For the figs, place all ingredients except figs in a saucepan over medium-high heat. Simmer for 10 minutes, then add figs and simmer for a further 3 minutes or until figs soften slightly. Remove figs with a slotted spoon and set aside. Return pan to the heat and simmer liquid for 4-5 minutes until reduced to 1 cup. Remove from heat, return figs to pan, then allow to cool. **02** Preheat oven to 180°C. Season chicken. Heat oil in an ovenproof pan over medium heat. Cook chicken for 3-4 minutes each side until golden. Transfer to the oven for 5 minutes or until cooked through. Rest while you prepare the salad ingredients. **03** Remove figs from syrup and halve. Slice the chicken into strips. Arrange chicken, figs, mozzarella, prosciutto and rocket on a serving platter. Drizzle with some of the spiced fig syrup, then season and serve.

What the hell was I going to eat for lunch now that bread was the devil incarnate. I had managed to navigate my whole entire (well almost) school lunches eating multigrain BLT sandwiches. This still ended up being my go to ‘easy win’ lunch as an adult when I didn’t have the energy to make something exciting. After diagnosis, I tried all the gluten free ‘breads’ on the market. Well lets just call them bread for categorisation sake ONLY, because they all could have been used for insulating houses rather than eating. Crumbly, dry, and down right revolting unless toasted almost to incineration point, then only barely edible. I thought my days of BLT’s were gone forever until I stumbled upon a recipe by the brilliant chef Pete Evans for Paleo bread and my whole world has changed (insert sounds of heavens gates opening, harps playing, doves flying off into the clouds). This bread is soft, incredibly tasty, even elastic like my enemy gluten, easy to make and super healthy and good for you to boot. Well rest assured I have found an alternative that is absolutely delicious and you won’t be missing the gluten at all! This has parmesan added to it so it can’t technically be called Paleo but you could leave it out if you wanted to make it a ‘PPP’ purely paleo pizza! **Ingredients** Cauliflower Base 600G Cauliflower Florets ¾ cup (90g) Almond Meal (Ground Almonds) ½ cup (40g) Finely Grated Parmesan 3 Eggs, Lightly Beaten Sea Salt and Cracked Black Pepper **Suggested Toppings** You can use whatever toppings you like but don’t use anything too wet or the base will lose it’s crispiness and fall apart. I used the following and it was amazing: Sliced grilled peppers Thinly sliced Prosciutto Crumbled Persian Feta Caramelised Onions Rocket **Method** **01** Preheat oven to 200C. Line a baking tray with non-stick paper. To make the cauliflower base, place the cauliflower in a food processor, in batches, and pulse until it resembles fine crumbs. Transfer to a large bowl, add the almond meal, parmesan, egg, salt and pepper and mix to combine. **02** Press out ingredients into a thin layer to create the base and cook for 25-30 min. **03** Take out of the oven and layer the base with ingredients and cook for a further 10-15 minutes depending on the toppings.

body![wings_lrg.jpg](https://steemitimages.com/DQmbEPzXMA1kHq868RGpx2uReTayPJPsXqNtUs6NGV8vkR2/wings_lrg.jpg) Thank you Superbowl for providing us with a reason to cook up a huge bowl of delicious chicken wings *(as if we really needed a reason ;)* These wings are super easy and ÜBER moorish and tasty, so if you have guests, double the portion so you don’t have to club someone over the head to get your share of these Paleo Chicken Wings. **Ingredients** 1 kg Chicken Wings ¼ cup Tamari (substitute with light soy if you don’t want to use Tamari) ¼ cup Honey 1 inch grated ginger 3 cloves garlic ½ tsp chilli flakes **Method** **01** Preheat oven to 180C. Cut the wings into wingettes and drumettes. Mix all the marinade ingredients in a bowl. **02** Add the wing pieces and toss in the sauce, coating all of them and leave to marinate for 1 hour. Marinating can be skipped if you can’t bear to wait an extra hour for the wings. Roast for 45min - 1 hour, turning every 25 minutes or so, or until the wings are very tender and the sauce is sticky. But watch them, because they can get too dark too quickly at the end, given the honey in the cooking liquid.

I know there are a lot of skeptics out there who are like ‘Yer, it’s just the next fad diet/eating plan’ but there is real scientific merit to this way of eating and I have been transformed by the Paleo Diet. Let me also just say, I’m a foodie. **I LOVE FOOD**, in all it’s glory, the good bad and the ugly but never the bland! I have been on a journey to heal myself, and create a healthy but super tasty way forward so that I can be fit and healthy late into my life and able to enjoy my kids and my kids kids. I was diagnosed with Coeliacs Disease 15years ago now after spending most of my life miserable. Eating always came with a gamete of problems and I was never able to pinpoint the root cause as I had so many different symptoms and complaints. The diagnosis was really the start of my journey. I had always eaten healthily and was brought up eating whole foods but if you’re not eating the right whole foods for your body even those can be poisonous to you. Even after removing all gluten out of my diet and beginning the gut healing process, I still continued to suffer from a raft of digestive issues. I spent the years after diagnosis reading every single research paper and experts blogs I could get my hands on to try and educate myself on nutrition and food. Its amazing how you can think you know everything until you realise you actually know nothing. At school I was taught the healthy diet pyramid of food and what you should eat in what quantities and had pretty much always eaten according to this plan. Amazing, 25 years later and all the experts are saying we got it SOOOOOO wrong. The pyramid doesn't look anything like what I was taught. Modern science, tiny cameras and research into our microbiomes have enabled us to see that so many foods we have eaten from our earliest years are just not good for us. Gluten *(as incredibly tasty as it is)* is an evil that affects every human being just on differing levels yet I’d say 95% of the population does not know this and eats it every day. Dairy is homogenised and pasteurised which almost voids all nutritional benefits besides the fact that by the age of 1½, most humans no longer produce the enzymes capable of breaking down lactose. So this becomes yet another food we take in that causes inflammation in our bodies. These are just two examples of food groups we eat that have a negative affect on our bodies. Now don’t get me wrong, these two in particular taste fabulous and hence one of my dilemmas. How do I create tasty satisfying food for both myself and my family that we will actually **WANT** to eat yet removing all the foods that cause inflammation, side effects and long term disease. Lets be honest, we all want easy wins when it comes to cooking food we actually want to eat so I’m going to share the love with all the best recipes I cook so you too can live healthy happy lives.

Let me also just say, I’m a foodie. **I LOVE FOOD**, in all it’s glory, the good bad and the ugly but never the bland!\n\nI have been on a journey to heal myself, and create a healthy but super tasty way forward so that I can be fit and healthy late into my life and able to enjoy my kids and my kids kids. I was diagnosed with Coeliacs Disease 15years ago now after spending most of my life miserable. Eating always came with a gamete of problems and I was never able to pinpoint the root cause as I had so many different symptoms and complaints. The diagnosis was really the start of my journey. \n\nI had always eaten healthily and was brought up eating whole foods but if you’re not eating the right whole foods for your body even those can be poisonous to you. Even after removing all gluten out of my diet and beginning the gut healing process, I still continued to suffer from a raft of digestive issues. I spent the years after diagnosis reading every single research paper and experts blogs I could get my hands on to try and educate myself on nutrition and food. Its amazing how you can think you know everything until you realise you actually know nothing.\n\nAt school I was taught the healthy diet pyramid of food and what you should eat in what quantities and had pretty much always eaten according to this plan. Amazing, 25 years later and all the experts are saying we got it SOOOOOO wrong. The pyramid doesn't look anything like what I was taught. Modern science, tiny cameras and research into our microbiomes have enabled us to see that so many foods we have eaten from our earliest years are just not good for us. Gluten *(as incredibly tasty as it is)* is an evil that affects every human being just on differing levels yet I’d say 95% of the population does not know this and eats it every day. Dairy is homogenised and pasteurised which almost voids all nutritional benefits besides the fact that by the age of 1½, most humans no longer produce the enzymes capable of breaking down lactose. So this becomes yet another food we take in that causes inflammation in our bodies. These are just two examples of food groups we eat that have a negative affect on our bodies. \n\nNow don’t get me wrong, these two in particular taste fabulous and hence one of my dilemmas. How do I create tasty satisfying food for both myself and my family that we will actually **WANT** to eat yet removing all the foods that cause inflammation, side effects and long term disease. Lets be honest, we all want easy wins when it comes to cooking food we actually want to eat so I’m going to share the love with all the best recipes I cook so you too can live healthy happy lives.",
