| title | Parenting Sometimes Makes Us Crazy! |
| body |
Have you ever seen a photo of one of those old baby cages hanging from the window of a 1930s skyscraper? In the 1930s, parents worried about the health of their children because of the poor air quality in these tall, old buildings.

I guess that fresh air thing must have been a good thing because in some ways it still persists today. Scandinavian parents often park their little ones in strollers outside restaurants while they come inside for a break. They say that fresh air and even cold air are good for their babies' lung development.

I do not disagree with the idea of giving our little ones some fresh air. But, in a similar vein, I don't think we'll see any American parents today hanging their children outside their 10th floor apartment window in a cage. We also won't see parents leaving their little ones out in the cold unattended to develop lung capacity.

Want to know what else seems a little crazy? Today's American parents take youth sports too seriously. Rules have even been put in place at some youth competitions to discourage applause. Officials continually remind parents of appropriate behavior during games. And signs are posted everywhere just in case parents forget the rules. Coaches even send behavioral contracts home for athletes and their parents to sign. Police are now stationed at a large number of youth games that take place every day in our great country. Do you remember this madness when we were children? No, me neither. Parents have gone a bit crazy about youth sports, haven't they? Parents, let's relax a bit and let our kids have fun. Okay?

Now, as my grandfather always said, "Go learn, lead and prepare the way to a better world for all of us." Keep in mind that sometimes things can get a little crazy, however, with some soul-searching and personal thinking we can stop some of the madness right now. And once again parents, thank you in advance for everything you do and everything you will do ...
|

| title | Recipes Using Red Kidney Beans |
| body |
Red kidney beans come in three basic forms... fresh, dried and canned. In the supermarket you are unlikely to be able to find fresh beans but should not have problem in finding dried and canned beans.

Caution... raw kidney beans contain large amounts of phytohemagglutinin, a toxic protein that can cause diarrhoea and vomiting. You can only get rid of this toxin by soaking the beans in water for at least 5 hours (or overnight, preferably) and throwing out the water, and then boiling the beans in fresh water for at least ten minutes at 1000C (2120F). Rest assured that properly prepared beans are safe to eat and very nutritious.

How to rehydrate red kidney beans

When you buy dried beans, you have to rehydrate them before you can cook them. There are several ways you can rehydrate dried beans all of which are very easy to do but take a bit of time. The only equipment you need is a stockpot.

A stockpot is a wide pot with a flat bottom, straight sides, a wide opening to the full diameter of the pot, two handles on the sides, and a lid with a handle on top.

Dried beans from a farm so they are likely to need a good clean out before you start rehydrating them... lay them out on a flat surface such as a large tray and remove any foreign matter or shrivelled beans. Once you have finished cleaning them, they'll be ready for soaking.

When soaking, use approximately 10 cups of water for 450 grams (1 pound) of dried kidney beans.

Slow soak... this method will take 8 hours or more but it is very thorough:

Put the beans into the stockpot with the water

Cover the pot

Place the pot in the refrigerator and leave it there overnight or longer (minimum of 8 hours)

Pour out the water and rinse the beans properly in fresh water

Flatul ence-free slow soak... according to the Mayo Clinic this method will eliminate 90% of the indigestible fibres (alpha-galactosides) that cause flatulence when you eat red kidney beans:

Bring the water in the stockpot to the boil

Put the beans into the boiling water

Bring to the boil again and boil for three more minutes

Cover the stockpot tightly and allow it to stand at room temperature overnight, ie a minimum of 8 hours

Pour out the water and rinse the beans thoroughly in fresh water

Both these methods take a lot of time to complete. Here are two quicker ways to rehydrate the beans.

Hot soak... this way will take about 3 hours:

Bring the water in the stockpot to the boil

Put the beans into the boiling water

Bring to the boil again and then remove from the heat

Cover the stockpot tightly and allow it to stand at room temperature for 2 to 3 hours

Pour out the water and thoroughly rinse the beans in fresh water

Quick soak... this will take a bit over one hour overall

Bring the water in the stockpot to the boil

Put the beans to the boiling water

Bring to the boil again and boil for three more minutes

Cover the stockpot tightly and allow it to stand at room temperature for one hour

Pour out the water and thoroughly rinse the beans in fresh water

How to prepare canned red kidney beans

As stated in my previous article Why you should eat red kidney beans, you may use canned (tinned) beans which have already been cooked. The only drawback is that tinned beans have a much higher sodium content as salt is added as a preservative during canning.

You may be able find low sodium varieties. If not, you can drain and rinse the beans thoroughly using a colander under free-flowing cold water... this will get rid of up to 40% of the sodium content.

But note that draining and rinsing canned beans can remove other micro-nutrients, such as the water-soluble B vitamins or vitamin C. You can get around this by adding other healthy foods, such as carrots, onions, bell peppers and celery, to your meal to boost its nutritional value.

Recipes for meals with red kidney beans

These beans are extremely versatile and can be used in a variety of prepared foods and meals, such as:

Soups and broths

Salads

Hummus

Burgers

Curries

Here are a few recipes I have tested myself. They are all highly nutritious and easy to do, though the last one is a trifle complex and requires a bit of work.

Red kidney bean broths and soups

Broth (aka bouillon) is a savoury liquid made of water in which bones, meat, or vegetables have been simmered. Soup is a broth to which other ingredients, vegetables, meat or fish, have been added.

The secret in creating delicious broths and soups is in the judicious choosing of ingredients. Kidney beans can add nutrition and flavour to any broth or soup. Just throw them in.

Here's a slightly complex Red Kidney Bean & Vegetable soup, enough for four people:

What you'll need to make red kidney bean and vegetable soup:

1x tablespoon of olive oil

1x yellow onion, chopped

1x garlic clove, minced

2x carrots, chopped

2x teaspoons of sodium-free chili powder

1x teaspoon of ground cumin

4x cups of low-sodium low-fat chicken OR vegetable broth

2x 425-gram (15 ounces) tins (cans) of low-sodium kidney beans, rinsed and drained

1x cup of frozen whole kernel corn

1/4x teaspoon of freshly ground black pepper

1x 410-gram (14.5 ounce) tin (can) of low-sodium stewed tomatoes

You'll also need a large stock pot.

How to make red kidney bean and vegetable soup

Put the stewed tomatoes and one can of beans in a blender or food processor

Puree until smooth and set aside

Heat the large pot over medium heat, and warm up the olive oil

Add the chopped yellow onion, minced garlic and chopped carrots

Cook, stirring as necessary, until tender (about 5 minutes)

Add the chili powder and ground cumin and stir constantly for about one minute

Add the chicken or vegetable broth, the second can of beans, frozen whole kernel corn and the freshly ground black pepper, and bring the lot back up to the boil

Add the pureed tomatoes and kidney beans (from steps 1]and 2) to the soup and bring the lot back up to the boil again

Reduce the heat, cover and simmer for about 15 minutes.

Cool and enjoy!

Note... you can tweak this recipe as you see fit and to taste by varying the ingredients, adding or reducing them.

Red kidney bean salads

Salads made with beans are very dense in macro- and micro-nutrients relative to the calories you get from eating them. "title": "Recipes Using Red Kidney Beans",
"body": "
Red kidney beans come in three basic forms... fresh, dried and canned. In the supermarket you are unlikely to be able to find fresh beans but should not have problem in finding dried and canned beans.
\n
Caution... raw kidney beans contain large amounts of phytohemagglutinin, a toxic protein that can cause diarrhoea and vomiting.
\n
How to rehydrate red kidney beans
\n
When you buy dried beans, you have to rehydrate them before you can cook them. There are several ways you can rehydrate dried beans all of which are very easy to do but take a bit of time. The only equipment you need is a stockpot.
\n
A stockpot is a wide pot with a flat bottom, straight sides, a wide opening to the full diameter of the pot, two handles on the sides, and a lid with a handle on top.
\n
Dried beans from a farm so they are likely to need a good clean out before you start rehydrating them... lay them out on a flat surface such as a large tray and remove any foreign matter or shrivelled beans. Once you have finished cleaning them, they'll be ready for soaking.
\n
When soaking, use approximately 10 cups of water for 450 grams (1 pound) of dried kidney beans.
\n
Slow soak... this method will take 8 hours or more but it is very thorough:
\n

\n
\n
Put the beans into the stockpot with the water
\n
Cover the pot
\n
Place the pot in the refrigerator and leave it there overnight or longer (minimum of 8 hours)
\n
Pour out the water and rinse the beans properly in fresh water
\n
\n Flatul\n ence-free slow soak... according to the Mayo Clinic this method will eliminate 90% of the indigestible fibres (alpha-galactosides) that cause flatulence when you eat red kidney beans:\n

\n

\n
\n
Bring the water in the stockpot to the boil
\n
Put the beans into the boiling water
\n
Bring to the boil again and boil for three more minutes
\n
Cover the stockpot tightly and allow it to stand at room temperature overnight, ie a minimum of 8 hours
\n
Pour out the water and rinse the beans thoroughly in fresh water
\n
Both these methods take a lot of time to complete. Here are two quicker ways to rehydrate the beans.\n

\n
Hot soak... this way will take about 3 hours:
\n

\n
\n
Bring the water in the stockpot to the boil
\n
Put the beans into the boiling water
\n
Bring to the boil again and then remove from the heat
\n
Cover the stockpot tightly and allow it to stand at room temperature for 2 to 3 hours
\n
Pour out the water and thoroughly rinse the beans in fresh water
\n
\n Quick soak... this will take a bit over one hour overall\n

\n

\n
\n
Bring the water in the stockpot to the boil
\n
Put the beans to the boiling water
\n
Bring to the boil again and boil for three more minutes
\n
Cover the stockpot tightly and allow it to stand at room temperature for one hour
\n
Pour out the water and thoroughly rinse the beans in fresh water
\n
\n How to prepare canned red kidney beans\n

\n
As stated in my previous article Why you should eat red kidney beans, you may use canned (tinned) beans which have already been cooked. The only drawback is that tinned beans have a much higher sodium content as salt is added as a preservative during canning.
\n
You may be able find low sodium varieties. If not, you can drain and rinse the beans thoroughly using a colander under free-flowing cold water... this will get rid of up to 40% of the sodium content.
\n
But note that draining and rinsing canned beans can remove other micro-nutrients, such as the water-soluble B vitamins or vitamin C. You can get around this by adding other healthy foods, such as carrots, onions, bell peppers and celery, to your meal to boost its nutritional value.
\n
Recipes for meals with red kidney beans
\n
These beans are extremely versatile and can be used in a variety of prepared foods and meals, such as:
\n

\n
\n
Soups and broths
\n
Salads
\n
Hummus
\n
Burgers
\n
Curries
\n
Here are a few recipes I have tested myself. They are all highly nutritious and easy to do, though the last one is a trifle complex and requires a bit of work.\n

\n
Red kidney bean broths and soups
\n
Broth (aka bouillon) is a savoury liquid made of water in which bones, meat, or vegetables have been simmered. Soup is a broth to which other ingredients, vegetables, meat or fish, have been added.
\n
The secret in creating delicious broths and soups is in the judicious choosing of ingredients. Kidney beans can add nutrition and flavour to any broth or soup. Just throw them in.
\n
Here's a slightly complex Red Kidney Bean & Vegetable soup, enough for four people:
\n
What you'll need to make red kidney bean and vegetable soup:
\n

\n
\n
1x tablespoon of olive oil
\n
1x yellow onion, chopped
\n
1x garlic clove, minced
\n
2x carrots, chopped
\n
2x teaspoons of sodium-free chili powder
\n
1x teaspoon of ground cumin
\n
4x cups of low-sodium low-fat chicken OR vegetable broth
\n
2x 425-gram (15 ounces) tins (cans) of low-sodium kidney beans, rinsed and drained
\n
1x cup of frozen whole kernel corn
\n
1/4x teaspoon of freshly ground black pepper
\n
1x 410-gram (14.5 ounce) tin (can) of low-sodium stewed tomatoes
\n
You'll also need a large stock pot.\n

\n
How to make red kidney bean and vegetable soup
\n

\n
\n
Put the stewed tomatoes and one can of beans in a blender or food processor
\n
Puree until smooth and set aside
\n
Heat the large pot over medium heat, and warm up the olive oil
\n
Add the chopped yellow onion, minced garlic and chopped carrots
\n
Cook, stirring as necessary, until tender (about 5 minutes)
\n
Add the chili powder and ground cumin and stir constantly for about one minute
\n
Add the chicken or vegetable broth, the second can of beans, frozen whole kernel corn and the freshly ground black pepper, and bring the lot back up to the boil
\n
Add the pureed tomatoes and kidney beans (from steps 1]and 2) to the soup and bring the lot back up to the boil again
\n
Reduce the heat, cover and simmer for about 15 minutes.
\n
Cool and enjoy!\n

\n
Note... you can tweak this recipe as you see fit and to taste by varying the ingredients, adding or reducing them.
\n
Red kidney bean salads
\n
Salads made with beans are very dense in macro- and micro-nutrients relative to the calories you get from eating them. | title | Preparing Piranha: Four Delicious Recipes for Adventuresome Eating |
| body |
Whip up your native style of freshly caught Piranha, with these Brazilian recipes. Cachama, a breeding species related to Piranha, is often used where Piranha are not locally available. Cachama (in Colombia) and Tambaqui or Pacu (in Brazil) which also originate from the Amazon and Orinoco river basins can also be used. Two species of Cachama cultivated commercially in Central and South America are the white (Piaractus brachypomus) and the black (Colossoma macropomum). If one of these is not available where you live, firm white-fleshed fish or fillets will suffice. Here are four delicious ways to prepare your Piranha:

Piranha in tomato sauce

Ingredients:

Piranha, whole, cleaned and scaled

4 firm, ripe tomatoes

1 medium onion, finely chopped

2 tablespoons finely chopped fresh parsley

half a cup of water

2 tablespoons of margarine

salt and pepper to taste

Instructions:

Peel and cut the tomato into small cubes. Put half of the tomatoes and onion in a large skillet, place the cleaned Piranha on top and cover with the rest of the tomato, onion and parsley. Add salt and pepper.

Add half the water and cook, covered, over low heat for about 20 minutes or until the fish can be easily pierced with a fork.

Carefully remove the piranha from the pan and place it on a warm serving platter.
Reduce the mixture in the pan for an additional 5 minutes until thickened and pour over the Piranha.

Brazilian piranha soup

Ingredients:

Piranha, whole fish (or heads)

seasonal green vegetables or to taste

carrots, peeled and sliced or diced

yams, peeled and cut

onions, whole, small or cut into quarters

salt and pepper to taste

1 or 2 small peppers to spice things up a bit

small ginger root, roughly chopped

1 or 2 lemons or limes, sliced or quartered

Instructions:

Boil the whole fish in a vegetable broth with spices and pieces of ginger. Add fresh cut vegetables. Remove the bones and large fins from the fish. Slice lemon or lime for garnish. Remember that the head is an aphrodisiac and is often served separately. The soup can also be made entirely from piranha heads if desired.

Fried piranha

Ingredients:

One medium-sized whole piranha for each serving

2 or 3 cloves of garlic

salt and pepper

sprig of fresh parsley

whole lemon or lime

1 or 2 whole ripe tomatoes, sliced

small amount of seasoned flour or cornmeal

Instructions:

Clean and carefully scale the fish. Make a series of diagonal cuts along both sides of the fish from top to belly. Crush the garlic cloves and mix them with the salt and a little pepper. Rub this mixture into the cuts along the sides of the fish. Wrap with a damp banana leaf (or damp paper towel). Marinate for 30 minutes to an hour. Some Colombian cooks leave it refrigerated overnight. Heat fresh cooking oil on high in a large skillet. Sprinkle the marinated fish lightly with seasoned flour or cornmeal. Fry a golden color on each side, carefully turning the fish after browning. Serve hot garnished with tomato slices and fresh lemon or lime juice squeezed over the fish.

Grill Piranha Amazone

Grilling freshly caught fish over an open fire is always a tasty way to enjoy a fresh catch. Use a whole cleaned and scaled fish, rub it lightly with oil, season it with salt and pepper or other available spices, then place on a grill, about 4-6 inches from the heat. . In the wild, you can use a frame of small twigs and shaved saplings to position the fish above the fire. Cover the fish with a banana leaf (or foil) and cook until the fish is golden on the underside, about 6 to 8 minutes. Gently flip the fish and continue until the meat is close to the bone (check with the tip of a small knife or long fork), about 8 to 10 minutes. Small fish generally work best with this method, especially in the jungle.

Modifying these procedures slightly will allow you to adapt them for use with a barbecue. If you haven't already, be sure to read the article "Piranha: Deadly and Delicious" which is online at: http://EzineArticles.com/?id=72722 . | title | 8 Computing Solutions at the Forefront of the New Economy |
| body |
In the past few years, we have seen new and exciting technologies that promise a more decentralized and secure economy. In this article, I have included some of the main players in this developing market.

1. Golem

Golem is an open-source, decentralized computer network.

How Golem Works

The Golem Network is a market for computing power, where users can earn from 'renting' their machines or by developing and selling software.

Within the network, users renting computing power are called "providers" and users acquiring power are called "requestors." The requestors use Golem for various purposes, including graphics processing, data analysis, microservices, and machine learning.

Benefits

The work division means that tasks can be completed simultaneously, thus enabling shorter timelines for projects.

The cost of doing business is less than cloud-based services.

Users can be instantly paid for their work with the Golem Network Token (GTM), a token on Ethereum blockchain.

Golem is building their whole stack from bottom to top, an approach that typically results in great UXs.

2. iExec

IExec is a decentralized marketplace for cloud services focused on blockchain-based distributed applications and affordable, high-performance computing.

iExecc Dapps

Unlike Golem, iExec (since the release of its v1) allows anyone to develop and run applications.

The iExecc Dapp store contains a variety of apps. Considering the experienced team behind iExec, their reason to choose the Dapp pathway is that there's probably less competition here. After establishing themselves in the decentralized Dapp market, iExec plans on expanding into decentralized computing tasks.

RLC

RLC is short for 'Runs on Lots of Computers,' and it's the native token of iExec. There are currently 87 million of the ERC-20 token in circulation.

3. Ethereum

Ethereum is an open-source, blockchain-based platform that enables users to build decentralized applications. The computations are performed in an isolated environment called Ethereum Virtual Machine that resides in all node connected on the network. The product of the computations is stored on the blockchain.

Features of the Ethereum Blockchain

Ether

Ether is the currency of the Ethereum blockchain. The cryptocurrencies ETH (Ethereum Hard Fork) and ETC (Ethereum Classic) are two values of Ether.

Smart Contract

The EVM is capable of executing a "smart contact," an algorithm that stores and automatically executes terms of agreements. Both parties involved in a transaction agree to the terms written in the smart contract.

Bitcoin vs Ethereum Platform

The Bitcoin blockchain focuses on a set of pre-defined operations, such as tracking Bitcoin transactions, while Ethereum allows users to run code of any complexity, making it suitable for any decentralized application, including cryptocurrencies.

Consensus Mechanism

Computation on the Ethereum network cost more and take longer than a standard computer because of the parallelization of computing. To maintain consensus, all participants must agree over the order of all transactions that have taken place, whether they have taken part in the transaction or not.

Ethereum nodes store the most recent state of each smart contract, along with all of the Ether transactions. As EVM is an isolated system, the code runs without access to the network or the filesystem. So, there's limited accessibility even among smart contracts.

4. Hyperledger Fabric

Hosted by the Linux Foundation, Hyperledger Fabric is an open source distributed ledger technology (DLT) having a modular and configurable architecture that can be employed at the enterprise level in various industries.

Features of Hyperledger Fabric

Privacy, Development, and Performance

The Fabric platform enables permissioned, private operation where the operators know each other and can be bound by rules, such as a legal agreement.

Fabric supports smart contracts written in common languages, such as Java and Go, so no additional training is required to create the smart contracts.

Performance is enhanced because, unlike Ethereum, only parties taking part in the transaction have to reach consensus.

Fabric Nodes

Also unlike Ethereum, Fabric nodes have different roles and tasks in the consensus process. The nodes can be orderers, clients, or peers.

Native Currency

Fabric does not have a native cryptocurrency. However, chaincode can be used to develop a native currency.

5. Tendermint

Tendermint has a blockchain consensus engine, known as Tendermint Core, and a generic application interface, known as Application Blockchain Interface (ABCI). The software enables secure and consistent replication of an application on multiple machines.

Tendermint Core

The Byzantine Fault Tolerant (BFT) middleware of the consensus engine can securely replicate state transition machinery. BFT middleware can tolerate one-third of failures, including hacking attacks.

Tendermint had the goal of offering a more secure and efficient consensus algorithm than Bitcoin's PoW (Proof of Work). The software formed the basis of important research by consensus protocol Casper's team: a fault-tolerant chain, such as Tendermint, can make good decisions about who produces a block, while a less reliable chain results in a chicken and egg problem.

The software is user-friendly, replicates applications written in any language, and has multiple applications.

6. Lisk

Lisk is a decentralized and distributed platform that allows users to develop apps and support them with customized blockchains.

Lisk Features

Developers can use Lisk's JavaScript-based software development kit (SDK) to build both the backend and the frontend of their app. However, Lisk doesn't offer protection against non-deterministic behavior. Also, the platform can't prevent infinite loops and measure memory consumption.

Lisk's Consensus Mechanism

Lisk asks developers to follow "rules" for contracts to ensure consensus. For instance, they ask developers to "don't use Math.random()."

7. Corda (V 3.0)

Corda is an open source, distributed ledger platform (DLT) catering to the financial industry.

Features of Corda

Corda's network is a permissioned network - it's not open to all node operators. The nodes run on Corda and CoDapps and communicate point-to-point with each other.

The 'doorman' of each network sets the admission rules for nodes that want to join the network. Like Fabric, Corda offers more privacy because of its fine-grained access control to records, and better permeance because of limiting consensus to the involved parties.

On Corda, contract developers also add legal prose to their contract. This feature consolidates the contract by legitimizing it with the associated legal prose. The platform does not have a native token.

8. Rootstock

Rootstock (RSK) is an open source smart-contract platform that is built on the Bitcoin blockchain.

Rootstock Features

Smart Contracts

RSK is enabling smart contract on the Bitcoin network. It uses the Turing-complete Rootstock Virtual Machine (RVM) for smart contracts. A 2-way peg allows users to directly send Bitcoin onto the Rootstock chain. The RSK coins can be used with smart contracts and Dapps. RSK contracts replicate 'Proof-of-Existence,' which is used to prove the existence of a document (or property right).

Security

The RSK blockchain has merge-mining, giving it the same level of security as Bitcoin in terms of settlement finality and double-spending.

SBTC

RSK is a sidechain of Bitcoin. The Bitcoins on the Rootstock blockchain are called SBTC.

RSK is filling the gaps in the Bitcoin network by enabling faster transactions. Besides being convenient for users, it also helps to keep the Bitcoin block size within limits.
|

The RSK coins can be used with smart contracts and Dapps. RSK contracts replicate 'Proof-of-Existence,' which is used to prove the existence of a document (or property right).
\n
Security
\n
The RSK blockchain has merge-mining, giving it the same level of security as Bitcoin in terms of settlement finality and double-spending.
\n
SBTC
\n
RSK is a sidechain of Bitcoin. The Bitcoins on the Rootstock blockchain are called SBTC.
\n
RSK is filling the gaps in the Bitcoin network by enabling faster transactions. Besides being convenient for users, it also helps to keep the Bitcoin block size within limits.
\n \n",
