      "body": "小時候第壹次吃到生煎包的時候喜歡上了底下那層在平底鍋裏油煎過的包子皮，焦脆鹹香，長時間的熱鍋炙烤讓裏面的餡料出了油，很潤，十分可口，唯壹不夠完美的是沒有煎過的面皮像爛泥粘到牙齒上感覺不太好。\n![4894866dx730cfc6fc739&690.jpg](https://steemitimages.com/DQmPaF9wHgSgF9JRz5CP3RcUf6JYfF2799jXBuMLqqSfMuz/4894866dx730cfc6fc739%26690.jpg)\n\n當我到了新疆，吃到了維吾爾大叔做的烤包子後便覺得生煎真的是小兒科了。山外有山，人外有人，生煎包外有烤包子啊。\n\n我所在的西北小城裏壹條沒有名字的巷子裏，有壹家開了近十年的包子店，門面很小約莫二十平米，店裏並沒有有桌子，而是三面沿著墻壁裝了大約三十公分寬的擱板，擱板下放著寥寥可數的幾根售價低廉的鐵制三腳圓凳，凳子被無數的客人的臀部肆意蹂躪，好些已經變形了。\n\n店門口的榆樹下也放著幾根變形了的三腳凳，三腳凳們常被或胖或瘦的各種臀部霸占著。那些臀部的擁有者壹手拿著四角沙包似的包子往嘴裏塞，壹手端著盛了淺棕色的茶水的廉價的壹次性塑料杯。壹邊吃壹邊說笑，臉上盡是大快朵頤的滿足與喜悅。\n\n\n圖片來自網絡\n有的客人就直接在榆樹下站著吃；有的打包帶走；中午時候才會有為數不多的客人在店裏的擱板上放個盤子喝著茶水聊著天慢慢吃，將午休時光悠悠然消磨掉之後挺著肚皮滿意地回單位上班。\n\n更多的客人開了車從四面八方聚攏過來，或者壹個食品袋裝上二三十個；或者這樣的袋子好幾袋的帶走；甚至有幾回我看到客人拿來深深的不銹鋼菜盆裝了放進後備箱中飛快的發動車子絕塵而去……\n\n春天裏的大多數時候店門口總是不斷從四面八方冒出男女老少來排隊等候包子出爐。\n\n是的，不是出鍋，也不是出籠，的確是出爐。好奇了吧？前面說得這麽熱鬧卻都沒見包子長啥樣啊。可不是，包子每次剛壹出爐就會在幾分鐘之內被搶購壹空，不是被帶走了就是迅速進了吃貨們的肚子裏了，怎麽看得到嘛？\n![1500617280_22617_4.jpg](https://steemitimages.com/DQmVrjHXrLYEkQjVkfy6sj3iLF11kdgVWtzGZvL4N7Bya2F/1500617280_22617_4.jpg)\n\n圖片來自網絡\n包子就在店門口現場烤制。露天放著的壹圓壹方兩個鐵皮大桶樣的家夥叫做饢坑，其實就是個大爐子，爐子的四壁糊的似乎是泥，內部看起來跟農村裏的土竈差不多。負責烤制包子的是老板和兩個維族小夥子。老板是個高、壯，且胖的維族大叔。話不多看起來很嚴肅，認真地幹著活。兩個夥計都很年輕，有壹個不胖不瘦劍眉深眼眶高鼻梁好帥！又愛笑！讓人心生好感。包好的生包子被送到爐子旁，然後被壹個個貼到爐壁，爐子裏大塊的煤歡快地燃燒著，印得兩個小夥子臉膛紅紅的。包子入了火海後爐口被蓋住只需靜靜等待十五分鐘左右，老板很有耐心。食客們站在爐邊吞咽著口水，望望爐子又望望老板氣定神閑的臉。性子急的忍不住問還要多久？老板胸有成竹：兩分鐘！\n\n香氣已經撲鼻而來，就像蛇鉆進鼻腔進入血液全身遊走讓人口水直流欲罷不能。\n\n兩分鐘後老板開啟爐蓋，客人們摩拳擦掌往滾燙的爐跟前湊，巴巴地看著老板和夥計拿壹把手柄長的出奇的大鐵勺伸進爐內變戲法般撈出壹個個烤得焦黃酥香的包子放到爐子邊的桌子上的壹個嬰兒澡盆壹般巨大的不銹鋼盆裏，桌邊坐著美麗大方雍容富態的老板娘或者他家如花似玉的女兒，麻利地用V形夾子按客人要的數量裝袋、收錢。幾分鐘之後爐子裏空了，不銹鋼大盆也空了，於是沒有搶的吃貨們不無惋惜地繼續等待下壹爐。\n\n這烤包子到底是怎樣的美味讓食客們趨之若速？它到底是用什麽做的？新疆本地出產的好面粉、吃野草喝雪水長大的羊身上上好的肥瘦相間的羊肉切小塊、又大又圓的白洋蔥切碎丁、孜然粉、雞蛋、還有牛奶，和鹽調勻。面皮搟得薄薄的方形，餡料放上去後左疊右疊，上疊下疊，看見過老太太用手帕包錢沒？就是那樣疊成小鋪蓋壹樣的四方塊就好了，邊上沾點水讓面皮粘起來不散。入爐之前看起來扁塌塌的，烤好後面皮硬朗鼓起像個小面包，牙齒壹咬焦香酥脆的表皮“嘎蹦”碎到嘴裏，齒間頓時被面的香味、羊肉洋蔥混合孜然的香味所包裹，高溫烘烤後肥肉化成油，肉與洋蔥更加滑嫩鮮香，真真的外焦裏嫩。剛出爐是很燙手的，可是食客們總是等不及的咬上壹口隨即被燙得齜牙咧嘴、眉飛色舞。\n![u=86463885,2041349736&fm=27&gp=0.jpg](https://steemitimages.com/DQmaTmkPD4YJmwZ9VqJXRGZFpdF3TnRMJjSPADf3Qg53vpY/u%3D86463885%2C2041349736%26fm%3D27%26gp%3D0.jpg)\n\n圖片來自網絡\n看到這裏是不是還有疑惑，這麽小的店面，和面剁羊肉切洋蔥在哪裏？地下室。店面腳底下有間地下室。這間門面是整排房子的最西頭了，墻跟有幾級階梯下去就是地下室，每天采購回來的面粉、洋蔥、羊肉以及各種調料都集中在那裏，和面、揉面、加工羊肉、洋蔥……\n\n包子店的生意春夏最是繁忙，老板包包子累得腰酸背痛，老板娘數錢數得眉開眼笑。即使冰天雪地的冬天吃貨們也熱情不減。齋月、古爾邦節、肉孜節關門休息，有時候春節也會休息幾天，壹年裏大約有兩三個月歇業，生意照樣紅紅火火老板腰包鼓鼓。\n\n猜猜這樣的包子壹個多少錢？大小尺寸參考蔣雯麗做廣告的某牌子的法式小面包。\n\n\n（福利）\n\n家庭烤箱制作烤包子菜譜：\n\n1、羊肉七分肥三分瘦剁碎成小丁加孜然粉腌制15分鐘，加鹽、糖、雞蛋液，順壹個方向攪至粘稠。洋蔥切碎丁加入羊肉餡攪拌均勻。\n\n2、面粉加冷水和成軟面團，15分鐘後分成小塊。\n\n3、小塊面搟成薄皮，放上肉餡，皮邊抹上蛋液。折疊，粘成方形的包子。\n\n4、包子表面刷蛋液蘸上芝麻，沒有芝麻就省略這步。烤盤鋪上錫紙，倒上色拉油。5、包子底蘸上油，擺放在烤盤上。烤箱預熱後，放入烤盤烤5分鐘。表皮鼓起，微微發黃時翻面。烤8分鐘後，再翻面烤2分鐘皮呈金黃色即可。\n\n特別提示：面皮薄壹點烤出來的包子更脆，餡料受熱快味道更香。烤箱功率不同，烤制時間也會不同，註意觀察適當調整時間。",
