For a dish with so much flavour you will be suprised how little time it takes to prepare.\n\nIngredients\n\n1 onion, peeled\n\n2 cloves garlic, peeled\n\n2 fresh tomatoes\n\n1 lemon\n\n2 chicken legs, thigh and drumstick\n\n1 tsp ground cumin\n\n1 tsp ground ginger\n\n1 tsp ground tumeric\n\n1/2 tsp ground cinnamon\n\n1 handful raisins\n\n1 handful black pitted olives\n\n1 splashes water\n\n3 sprigs fresh parsley, chopped\n\n3 sprigs fresh coriander, chopped\n\n1 butter\n\n100 g American Long-grain rice\n\n1 pinches turmeric\n\n1 pinch salt\n\n\nStep 1\n\nPREHEAT OVEN\n\nPreheat the oven to 180°C.\n\nStep 2\n\nCUT VEGETABLES\n\nSlice the onion and garlic, quarter the tomatoes and zest the lemon.\n\nStep 3\n\nCLEAN CHICKEN\n\nCut away any excess fat from the chicken, but leave most of the skin on.\n\nStep 4\n\nCOVER CHICKEN WITH SPICES\n\nRub the spices into the chicken in a bowl with a little salt and pepper, then lay the legs on top of the onions.\n\nStep 5\n\nADD REMAINING VEG AND COOK\n\nScatter the raisins, olives and quartered tomatoes around the chicken with the splash of water. Stick the lid onto the tagine and place it into the oven to cook for 75 minutes.\n\nStep 6\n\nCOOK THE RICE\n\nBoil the rice in salted water for 10 minutes just before the tagine is ready and then drain.\n\nStep 7\n\nADD THE HERBS AND SERVE\n\nTake the tagine from the oven and stir through the chopped herbs at the last moment before serving with the fluffy rice.
