| body | Hello Hello! I am back and sharing a great, easy winter dish that is warm, creamy, filling, and delicious. The colder days are when we all want those heavier foods that will comfort us from the chilly outdoors. This easy vegan curry is all those things we love but also nourishing and healthy!  I absolutely love this dish because: it’s totally plant based it’s chock full of veggies its has healthy fats from the coconut milk it is totally a comfort food it can be prepped and stored in the fridge its super delicious! Curry is one of my favorite dishes to make because it basically consists of 3 simple steps: sauté veggies add the coconut milk and curry paste simmer  And that’s it! You can choose any veggies you like to make it the ultimate winter dish. Are you ready for the recipe? Easy 1-Pan Vegan Green Curry By: Grace // Just A Veg Prep Time: 5 minutes Total Time: 20 minutes Serves: 2-3 Ingredients: 1 cup broccoli 1 medium zuchinni, sliced into half-circles 1 green bell pepper, sliced 1 medium onion, sliced 1 large carrot, chopped 1 cup fresh green beans 1 can full fat coconut milk 2 Tablespoons garlic 2 Tablespoons green curry paste (I used Thai Kitchen) 1 Tablespoons sesame oil Pinch of cayenne (optional) salt and pepper to taste Rice, quinoa, or rice noodles to serve Directions: 1.Prep and cut all your veggies. Start prepping whatever you will be serving the curry with (rice, noodles, etc) 2. Heat a large pan with the sesame oil. Add garlic and veggies and sauté until veggies are browned and soft (not mushy). Add salt and pepper to taste.  3. Reduce heat to simmer. Add your can of coconut milk and curry paste, stir to combine. Add cayenne if you would like. Simmer the mixture for 5 minutes. (My curry paste is all gone now hehe)    4. That’s it! Serve with your favorite side and enjoy!  I hope you love this easy recipe as much as I do! It is really so simple and a great, quick, and delicious dinner. Grain-Free Pumpkin Chocolate Chip Muffins By: Grace // Just A Veg Prep Time: 10 Minutes Cook Time: 20 minutes Total Time: 30 minutes Makes: 6 muffins Ingredients: 1 cup almond flour 2 Tablespoons coconut flour 1 Tablespoon Pumpkin Pie Spice (I use Trader Joes organic) 1 teaspoon baking soda 1/2 teaspoon sea salt 1/2 cup pumpkin pie filling 1 egg 1 teaspoon vanilla 1/4 cup vegan chocolate chips 2 Tablespoons hemp seeds Directions: 1. Pre-heat your oven to 350 degrees Fahrenheit 2. In a large bowl, mix together flours, pumpkin pie spice, baking soda and salt.    3. In another small bowl, combine the pumpkin pie filling, egg, and vanilla. 4. Add the wet ingredients to the dry and combine. The dough will be very cakey and thick.  5. Fold in the chocolate chips and hemp seeds  6. Line a baking tray with liners, and add about 1/4 + 1 Tablespoon of the dough to each muffin tin. the dough should come all the way to the top of the liner.  7. Bake at 350 for 20 minutes. They should be golden brown on the top. 8. Let cool for 30 minutes before eating. 9. Enjoy!  These can be stored for 5-7 days in the fridge, or 3-4 days on the counter. | body | Hello Hello! Who else is a major pasta-lover?  I have 3 words to tell you: I LOVE PASTA. It has been one of my favorite foods since I was little and continues to reign in my internal food hierarchy (haha). Since going Gluten Free, however, I have has to experiment with different types/brands of pasta and have found some types I love, and some that I don’t love as much. For me, I have found brown rice pasta to most closely resemble the consistency and taste of regular pasta. It is soft, not as gummy, and tastes great it a lot of different dishes! It is what I use in the recipe I am sharing with you today. I think it's a definite 9/10 Lentil pasta is a great, high protein pasta alternative that tastes great with sauces/veggie sauces. I find that without a sauce the flavor isn’t my favorite, but it is still good. Lentil pasta also tends to be VERY STICKY so you have to make sure you rinse it and eat it right after cooking. Overall, in my book, it is a 7.5/10. Chickpea pasta is also pretty good- I find it to be similar to lentil in consistency (gummier than brown rice), but I actually like the flavor of chickpea pasta better than lentil. It’s a personal preference, but I think chickpea pasta gets a 8/10! Black bean pasta is a total no-go for me. The texture is rather slimy and gritty, and it is chewy as well. I had it once and it’s safe to say I won’t go for it again. 2/10. (for effort) Corn pasta is also not my favorite. It has a very grainy texture I don’t prefer.(2/10) OK, that’s my GF pasta breakdown! Now, let’s get onto the recipe. This tomato-artichoke pasta is SO. DANG. EASY, and it is the perfect summer pasta dish, because it is light full of flavor satisfying minimal ingredients quick overall delicious It has a bit of a Mediterranean flair, and has easily become one of my favorite pasta dishes for summer 2019. Are you ready for the recipe?  Vegan Tomato Artichoke Pasta (GF) By: Grace // Just A Veg Prep Time: 10 minutes Cook time: 25 minutes Total Time: 35 minutes Serves: 2 Ingredients: 2 servings brown rice pasta (I’m using Explore Cuisine) 1 medium onion, sliced 2 tablespoons minced garlic 3 tablespoons olive oil 1 can artichoke hearts (I used Whole Foods brand) 1 can diced tomatoes 1/4 cup Kalamata olives, sliced (optional) 1 tablespoon lemon juice salt and pepper to taste Parsley and Vegan Parmesan for garnish Directions: Cook pasta according to package, set aside  While pasta is cooking, add olive oil, garlic, and onion to a large pan. Add salt and pepper to taste. Cook on medium-high until onion is browned and translucent.  Reduce heat and add artichoke hearts and diced tomatoes. Whether or not you strain the tomatoes is up to you. Leaving the juice in will give a more saucy dish, while straining will have less juice. I like to leave the juice in, but it is up to you! Simmer for 4-5 minutes.   Add Kalamata olives and lemon juice, and continue to simmer for another 3-4 minutes Finally, add your cooked pasta and salt and pepper to taste. Simply stir and you are done!  Scoop into bowls, garnish with parsley and vegan parmesan, and add more salt and pepper to taste. Enjoy!  I hope you love this pasta dish! | body | Hello Hello! Listen- I’m a newbie to tempeh. I honestly avoided soy completely until I did some research and found out not all soy is created equal. TOFU is soybean curdled and pressed. It is typically more spongy, absorbs flavor well, and has a more rubbery texture. Firstly, most tofu is GMO, which has many downsides for your health and the environment (Someday I will do a whole blog post on this topic!). However, even organic tofu contains phytoestrogens, which act like estrogen mimickers in the body. For men, this excess estrogen leads to more feminine characteristics, while in women, it can lead to breast cancer, cervical problems, and gut health. Lastly, tofu contains antinutrients, which can lead to leaky gut, bloating, and digestive stress. So, based on this, tofu for me is a no-go! TEMPEH however, is a different story. Tempeh is the soybean fermented whole. It has a denser and meatier texture. It is a great source of protein. Because it is fermented, it is rich in probiotics (aka gut healing), boosts bone health, and promotes digestive health. The fermentation process reduces the antinutrients that are present in tofu, creating a gut healthy protein source. Based on this, I opt for tempeh as my soy-based protein because of its benefits and avoid tofu because of its downsides. Tempeh is fairly easy to cook- you can boil it and then sauté or grill it, or just throw it in the pan! It has a nuttier flavor but is extremely customizable to your favorite sauce or marinade. This Teriyaki Tempeh Bowl is one of my favorites- the sticky, salty, and sweet teriyaki tastes like a healthy version of Chinese food takeout (from my pre-plant-based days). It’s a win-win!    Ready to delve into the recipe? Teriyaki Tempeh Bowls By: Grace // Just A Veg Servings: 2 Prep Time: 35 minutes Cook Time: 10 Minutes Total time: 45 minutes Ingredients: Lettuce Brown rice (cook enough for 2 people. Quick cooking rice, like this one from Bob’s Red Mill, will expedite this process.) 1 Avocado 1 8 oz package of organic tempeh Sesame seeds to garnish Marinade: 4 Tablespoons tamari 2 Tablespoons water 1 teaspoon liquid smoke 1 teaspoon garlic powder Ground pepper to taste Sauce: Leftover marinade 1 Tablespoon tamari 1 Tablespoon maple syrup 2 teaspoons sesame oil 1 teaspoon minced garlic Directions: 1. Begin cooking your rice. 2. In a wide bowl, mix marinade. Slice tempeh and add to marinade, coat, and let sit for 20 minutes 3. Heat a pan on medium heat with some sesame oil. Add tempeh (leave leftover marinade in the bowl!) and cook on one side until browned, about 2-4 minutes. Flip, and cook the other side until browned 4. While the tempeh is cooking, use the leftover marinade to make the sauce. Add the sauce ingredients to the marinade and mix. 5. Once tempeh is cooked, turn off the heat. Add the sauce to the pan (it will bubble) and coat the tempeh. Let sit for 3-5 minutes, until sauce is sticky. 6. In two bowls, add lettuce, cooked brown rice, tempeh, and avocado. | body | Hello Hello! Listen- I’m a newbie to tempeh. I honestly avoided soy completely until I did some research and found out not all soy is created equal. TOFU is soybean curdled and pressed. It is typically more spongy, absorbs flavor well, and has a more rubbery texture. Firstly, most tofu is GMO, which has many downsides for your health and the environment (Someday I will do a whole blog post on this topic!). However, even organic tofu contains phytoestrogens, which act like estrogen mimickers in the body. For men, this excess estrogen leads to more feminine characteristics, while in women, it can lead to breast cancer, cervical problems, and gut health. Lastly, tofu contains antinutrients, which can lead to leaky gut, bloating, and digestive stress. So, based on this, tofu for me is a no-go! TEMPEH however, is a different story. Tempeh is the soybean fermented whole. It has a denser and meatier texture. It is a great source of protein. Because it is fermented, it is rich in probiotics (aka gut healing), boosts bone health, and promotes digestive health.
