Aunque cada región se enorgullece de lo suyo, definitivamente hay algunos que se cuelan por todo el país y nos enaltecen. Aquí encontrarás una pequeña muestra de los más emblemáticos, pues ya son parte de nuestras tradiciones y costumbres culinarias. El mango, del cual se dice que hay más de 500 variedades, proviene del sudeste asiático. Fue introducido en América por los colonizadores portugueses y españoles en los siglos XV y XVI. Es rico en yodo, vitamina c y trementina, el mango es uno de los elementos fundamentales de las gastronomías tailandesa, camboyana e hindú, y también de nuestra hermosa Venezuela… donde los mangos abundan, los árboles son grandes y frondosos, dan una sombra espléndida y frutos por cantidad, sus hojas y corteza se utilizan para controlar la hipertensión. En este mes aprovecha la época de mangos y prepara este rico manjar típico de nuestra tierra, la Jalea de Mango, se hace con mangos pintones y azúcar, el resultado es una jalea firme o manjar con un acidito sabroso y de sabor en general delicioso. La Jalea de mangos es preparada a partir de mango verde o en algunos casos que estén pintones (término que se usa para el mango que apenas empieza a madurar). Este delicioso manjar tiene un sabor entre ácido y dulce, es abrillantado y su textura es espesa. Cada casa le da su toque especial a este dulce criollo y es que algunos le agregan limón, o vainilla o clavos de especia, y papelón envés de azúcar, el resultado es una jalea firme o manjar con un acidito sabroso. El sabor y la consistencia dependerá del tipo de mango que se use. ¡No se diga más! toma nota de la receta: Ingredientes:  1,5 kg. de mangos verdes enteros  Suficiente agua para cubrir los mangos  600 gr. de azúcar (añade la misma cantidad de azúcar que de pulpa)  ½ vaina de vainilla Mongos pintones ![](https://cdn.steemitimages.com/DQmfCE4iTfc3o8ydFCJhTXTdHekkMMguoA9QZPA8pnsXY3k/image.png) Preparación previa: 1. Lava los mangos y colócalos en una olla grande, cúbrelos con agua. 2. Cocina los mangos a fuego medio y tapados por aprox. 30 a 45 minutos, dependiendo del tamaño de la fruta. 3. Retira los mangos del agua, una vez que la piel se abra por si sola y sientas que la pulpa está blanda. Deja enfriar antes de comenzar a pelarlos. 4. Pela los mangos y extrae la pulpa con la ayuda de un rallador grande o de un colador. Coloca la pulpa en una olla, le añades la misma cantidad de azúcar que de pulpa. Añade la vainilla en rama si lo deseas. 2. Cocina a fuego medio-alto revolviendo continuamente con una cuchara de madera por aprox. 30 a 40 minutos. 3. Aparta de la hornilla y sacas la vainilla. 4. En un molde refractario humedecido con agua, vierte inmediatamente la jalea. Nivela la superficie para que no queden burbujas. 5. Deja enfriar. 6. Aunque cada región se enorgullece de lo suyo, definitivamente hay algunos que se cuelan por todo el país y nos enaltecen. Aquí encontrarás una pequeña muestra de los más emblemáticos, pues ya son parte de nuestras tradiciones y costumbres culinarias.\n\nEl mango, del cual se dice que hay más de 500 variedades, proviene del sudeste asiático. Fue introducido en América por los colonizadores portugueses y españoles en los siglos XV y XVI. Es rico en yodo, vitamina c y trementina, el mango es uno de los elementos fundamentales de las gastronomías tailandesa, camboyana e hindú, y también de nuestra hermosa Venezuela… donde los mangos abundan, los árboles son grandes y frondosos, dan una sombra espléndida y frutos por cantidad, sus hojas y corteza se utilizan para controlar la hipertensión. En este mes aprovecha la época de mangos y prepara este rico manjar típico de nuestra tierra, la Jalea de Mango, se hace con mangos pintones y azúcar, el resultado es una jalea firme o manjar con un acidito sabroso y de sabor en general delicioso.\n\nLa Jalea de mangos es preparada a partir de mango verde o en algunos casos que estén pintones (término que se usa para el mango que apenas empieza a madurar). Este delicioso manjar tiene un sabor entre ácido y dulce, es abrillantado y su textura es espesa. Cada casa le da su toque especial a este dulce criollo y es que algunos le agregan limón, o vainilla o clavos de especia, y papelón envés de azúcar, el resultado es una jalea firme o manjar con un acidito sabroso. El sabor y la consistencia dependerá del tipo de mango que se use.\n\n¡No se diga más! toma nota de la receta:\n\nIngredientes:\n\t1,5 kg. de mangos verdes enteros\n\tSuficiente agua para cubrir los mangos\n\t600 gr. de azúcar (añade la misma cantidad de azúcar que de pulpa)\n\t½ vaina de vainilla\n\nMongos pintones\n![](https://cdn.steemitimages.com/DQmfCE4iTfc3o8ydFCJhTXTdHekkMMguoA9QZPA8pnsXY3k/image.png)\n\nPreparación previa:\n1.\tLava los mangos y colócalos en una olla grande, cúbrelos con agua.\n2.\tCocina los mangos a fuego medio y tapados por aprox. 30 a 45 minutos, dependiendo del tamaño de la fruta.\n3.\tRetira los mangos del agua, una vez que la piel se abra por si sola y sientas que la pulpa está blanda. Deja enfriar antes de comenzar a pelarlos.\n4.\tPela los mangos y extrae la pulpa con la ayuda de un rallador grande o de un colador. Añade la vainilla en rama si lo deseas.\n2.\tCocina a fuego medio-alto revolviendo continuamente con una cuchara de madera por aprox. 30 a 40 minutos.\n3.\tAparta de la hornilla y sacas la vainilla.\n4.\tEn un molde refractario humedecido con agua, vierte inmediatamente la jalea.
