| body | Bill Mollison is the father of permaculture. He used to say something of the sort of: "trash is a resource ill-used". Nature doesn't generate trash. Everything is part of a chain, of a process. Also from permaculture is the concept that every element of that chain has multiple functions.  Early in my zero waste journey I learned about ferments as a vital part of a healthy body and a healthy household. In particular home-made vinegar recycles some of the kitchen waste, reduces the consumption of plastic packaging and saves the costs of large facilities manufacturing, oil for transportation, space, etc. All this thinking vinegar as a food. If we think of it as a cleaning agent also, the amount of waste reduction we produce along the whole chain is immense. Enzymatic cleaner is very similar to vinegar, both in its preparation and environmental properties. This is why I'm putting them both together. <h2>How to make vinegar</h2> To make vinegar we need three ingredients, a glass container and plastic wrap. <b>Ingredients:</b> * Clean water : Tap water doesn't work because it's full to the nose with biocides of different types. We need drinking water for edible vinegar and we can use untreated rain water if we make the vinegar for the purpose of cleaning. I usually make three litres at a time, because that's the size of my jars. * Unrefined organic sugar: Between 1/4 to 1/6 of the amount of water. The sugar provides both the main food and the ferment for the vinegar. * Fruit sliced thinly or fruit peels: More or less same weight of sugar. I use fruit to make vinegar for eating, and peels for vinegar destined to cleaning. What fruits? any, really. We only need to be careful of not putting spoiled fruit because mold will take over. Apple cider vinegar is made with green apples. I do it at times, or with red apples. For the most part I prepare loquat vinegar because loquat trees produce all the fruit in a very short amount of time and need processing. More about this other time. There is a chemical reaction involved, so it can´t be mixed in advance. <h2>Enzymatic cleaner</h2> Enzymatic cleaners are made with the same procedure as vinegar with two and a half differences: It also requires bread yeast added (I use 10 gr dry or 50 gr hidrated), and among the fruits or vegetables we need to have pineapple or kiwi. What's the other half difference? The fermentation process takes three months to fully develop. This way every nutrient is used up and we have the strongest possible product. The presence of yeast results in alcohol, some of which still appears in the end product. Because of the sugar and fruits, it will also have vinegar. And both pineapple and kiwi have special enzymes released in the mix. We can make soap with water kefir, and with regular vinegar. But because of these enzymes, we can't make soap with an enzymatic cleaner replacing water. There is a chemical reaction involved, so it can´t be mixed in advance.\n\n<h2>Enzymatic cleaner</h2>\n\nEnzymatic cleaners are made with the same procedure as vinegar with two and a half differences:\n\nIt also requires bread yeast added (I use 10 gr dry or 50 gr hidrated), and among the fruits or vegetables we need to have pineapple or kiwi. \n\nWhat's the other half difference? The fermentation process takes three months to fully develop. This way every nutrient is used up and we have the strongest possible product.\n\nThe presence of yeast results in alcohol, some of which still appears in the end product. Because of the sugar and fruits, it will also have vinegar. And both pineapple and kiwi have special enzymes released in the mix. \n\nWe can make soap with water kefir, and with regular vinegar. | body | I started a zero waste journey some years back. I'm not there yet, but getting closer. In these posts I plan to show what worked and didn't worked for me, in the hope that it might be useful for someone. Why it's important to head toward a zero waste life is evident. But one things is to know it and another to Know it. My pivoting moment was when I saw two documentaries: one about the huge plastic island in the Pacific and a second one about the recycling of flip flops leading to a business. Together they told me the problem was serious, and there was opportunity waiting in the process of finding a solution. Looking at my trash bag I realized that about 70% of the contents were vegetable peels and food leftovers. So there I put the effort first. For the vegetable peels I started a compost bin made out of an old cement water tank located under a tree. <h2>What I've learned about composting in the city</h2> Composting is the process of letting food left-overs be in a humid environment and let bacteria and fungus to decompose it. <b>What can be composted? </b> Anything that was once alive can be composted, but for my settings I only compost directly vegetables and eggshells. Fruit peels I pass through my living compacting machine, i.e. the rabbit. And cooked food scraps are taken cared of by the dog. Could all of that be put in a compost pile? Yes, but for meat I would need a meter cubic composting system, which is too complicated and takes work. I am all about saving the environment, but I don't have the muscle or the space for a hot compost pile.  <b>What does the rabbit eat?</b> As rule of the thumb I give the rabbit vegetables and fruits we eat raw and avoid nightshades and strong herbs. Example: carrots peels go to the rabbit, potato peels go to the compost bin. The rabbit manure goes right to the garden in settings I will not touch till a couple of months later, or to the garden compost pile. The garden compost pile is essentially a pile with garden clippings. I have several of these around, one per main area. The rabbit eats only my vegetable left overs plus the garden left overs and grass clippings. He doesn't eat any "store-bought" food, and takes all the water from the food he eats. Meaning: there's not water in the cage. And no. It's not out of cruelty, nor it's impossible as I've been told by a supposed expert. The little guy has been eating like this for about three years, and he is happy, strong and active. When we take him out of the cage he runs and plays, and he doesn't seem desperate to attack my plants either. I wouldn't let him unsupervised though. I'm not sure any vegetable combination would work. So here is what I do. I replace my own dinner by a juice promoted by Don Tollman called CABALA. This juice is a fasting juice. It has: Carrots green Apple Beetroot red Apple Lemon with peel yellow Apple More about this juice: https://tolmanselfcare.com/blogs/blog/the-healing-powers-of-cabala These peels go to the rabbit every night. I still give him grass and banana leaves a couple of times a day, but the juice left overs take him happily on their own. <b>Dog "approved" food</b> Dogs are particular, and as personal as their families. My dog's preferences taught me a lot about balanced formulation of a plate. So I cook for us, but for him as well. He would eat anything with animal fat and protein, all cooked, except for wheat. So rice as a carb is more dog friendly than spaghetti for example. He eats cooked vegetables as long as they have, again, protein or fat. So a typical meal that is for us, but also dog friendly would be rice with home-made bolognesa sauce with tons of veggies in it cut very small. I use only Himalayan salt or sea salt and olive oil to cook. This is very easy to do in about 30 minutes, it can be frozen, it holds well for the next day in the fridge, and my dog raves about it. <b>Worms compost</b> I have a small area where I promote worm composting. I say promote because it's not a box with the lil guys in it. It's just one planter under the banana trees where I place small left overs that can be turned into dirt in under three months. The left overs I use for the worms are the juicer pulp, coffee grinds and yerba mate. This dirt is the one I use to start seedlings. <b>Conclusions</b> Most of my waste was food left overs. | body |  Oils and fats are a horrible hazard if we pour them down the drain, so I realized early on that I needed to take responsibility over any waste related with fats, given the fact that I don't compost them. The first decision was to avoid frying, which I did. This decision is also part of being of the generation indoctrinated in "fats are bad for you". Later on I discovered Sally Fallon Morell and [Nourishing traditions](http://nourishingtraditions.com/nourishing-fats-need-animal-fats-health-happiness/), but the damage was done. I can't eat fats without feeling bad about it. The second decision was to only use high quality fats, which in my case ended up being olive oil for salted foods and coconut oil for sweets. Butter and cream came back, but that's a different story. Because olive oil has a higher smoke point than grain oils, it can be reused. But I don't like it, and never do it. So, even reducing fried foods I still have some oil left to dispose. And the worst amount of fat comes usually from chicken. My dog eats red meat fat raw, but he will not touch raw chicken. Because of this low fat thing I have, I usually take the skin out of the chicken before cooking it. So what do I do with all that? I found a way, and this is the main subject of this blog post: Soap. <h2>Making soap with waste fats and used cooking oil</h2>  <b>Step 1: Preparing the oils and fats.</b> This is pretty straight forward. The oils need to be passed through a strainer to catch solids and it's ready to go. With the chicken I use a simple system. I boil the chicken skin and carcase. The dog eats the cooked solids, and I gather the fat that's floating on the surface with a spoon. The soup is a good stock base for other preparations, and I usually freeze it after straining it. I don't usually use red meat fat because my dog likes it, but when I do the procedure is similar to the chicken one. It's boiled and the oil picked up. <b>Step 2: Measuring the ingredients</b> So now I weight both fats and oils. Let's say for simplicity we have 1Kg. I write down the total weight and gather my other ingredients: * lye, also called caustic soda at 99% (sodium hydroxide): 1/6 of the oils weight (in this example it would be 166 gr). * water for the lye: same amount of lye and yet some. It's very heavy in caustic soda so every single particle of fat will be used up, and it's a simple glycerin soap recipe instead of the normal one. I like this method better because it will result in an odorless soap which really cleanses. So, how to do it? It's better to mix the water with lye the day before. I never do it, but I don't use water. I use water kefir, which accelerates all processes. Security measures: lye is a very strong alkali with a ph of 12. Meaning: it can eat through flex. I don't use any protection for my eyes because I wear glasses and I prefer to see what I'm doing, but it's not a recommendation of any sort. Just my experience. The lye mixed with water is highly exothermic and reacts with metals, with the exception of stainless steel. So the place to make the mix needs to be heat resistant and non reactive. A milk jug or a plastic bucket work fine. It's recommended to add the lye to the water and not all the way around because of the temperatures. I have done it both ways without issues. Then, once the vortex is going strong I add the lye completely disolved in water slowly without stopping the vortex. Finally I add the sugar in water and keep the vortex going. It takes between 5 to 10 minutes to get to trace. It looks like a gelatin film covers the spoon. I have done this with a stick blender. but it becomes soap in a stick in one small push of the button, and it clogs the mixer completely while the rest is still separated. This soap is better done by hand and it's fast enough to be a non issue. The end result is a paste, because the fats are soft. To get a hard soap, hard fats are needed. I bottle this soap in soda bottles or plastic containers instead of using molds and let it sit for 3 weeks. After that time, there are two phases, one transparent and pasty and another one that is liquid. This liquid part contains the glycerin, most of the unused lye and soapy water. I add vinegar or more water kefir and shake it. Then let it rest for another week. This takes care of the extra soda and lowers the ph to a safe point. The liquid phase could be also extracted. But I don't really know what to do with it, so I leave it and use it as part of the soap. If it keeps separating, I just shake it. Instead of the vinegar, any acid can be added to take care of the extra lye. It can also be used clean oil. To know how much, it's necessary to use [soapcalc](http://soapcalc.net/calc/SoapCalcWP.asp) or equivalent and know a bit more of soap preparation.  <h2>What to use this soap for?</h2> It's a transparent pasty soap or semi liquid depending on the amount of water and vinegar added. It can be used to clean floors, wash dishes by hand and clean the bathroom. If we add sodium bicarbonate, it becomes a powerful grease cutter, and "stuff" remover. I use it to clean after barbecues, and when I forget a pot or a pan and burn the food--it happens. It's also great for stove-tops and ovens. <b>What I don't use this soap for?</b> I don't use it to wash clothes or people. "body": "\nOils and fats are a horrible hazard if we pour them down the drain, so I realized early on that I needed to take responsibility over any waste related with fats, given the fact that I don't compost them.\n\nThe first decision was to avoid frying, which I did. This decision is also part of being of the generation indoctrinated in \"fats are bad for you\". Later on I discovered Sally Fallon Morell and [Nourishing traditions](http://nourishingtraditions.com/nourishing-fats-need-animal-fats-health-happiness/), but the damage was done. I can't eat fats without feeling bad about it.\n\nThe second decision was to only use high quality fats, which in my case ended up being olive oil for salted foods and coconut oil for sweets. Butter and cream came back, but that's a different story. \n\nBecause olive oil has a higher smoke point than grain oils, it can be reused. But I don't like it, and never do it.\n\nSo, even reducing fried foods I still have some oil left to dispose. \n\nAnd the worst amount of fat comes usually from chicken. My dog eats red meat fat raw, but he will not touch raw chicken. Because of this low fat thing I have, I usually take the skin out of the chicken before cooking it. So what do I do with all that?\n\nI found a way, and this is the main subject of this blog post: Soap.\n\n<h2>Making soap with waste fats and used cooking oil</h2>\n\n\n\n<b>Step 1: Preparing the oils and fats.</b>\nThis is pretty straight forward. The oils need to be passed through a strainer to catch solids and it's ready to go.\n\nWith the chicken I use a simple system. I boil the chicken skin and carcase. The dog eats the cooked solids, and I gather the fat that's floating on the surface with a spoon. The soup is a good stock base for other preparations, and I usually freeze it after straining it.\n\nI don't usually use red meat fat because my dog likes it, but when I do the procedure is similar to the chicken one. It's boiled and the oil picked up.\n\n<b>Step 2: Measuring the ingredients</b>\nSo now I weight both fats and oils. Let's say for simplicity we have 1Kg. I write down the total weight and gather my other ingredients:\n\n* lye, also called caustic soda at 99% (sodium hydroxide): 1/6 of the oils weight (in this example it would be 166 gr). \n* water for the lye: same amount of lye and yet some. | body | As I mentioned in [Part 1](https://steemit.com/zero-waste/@elearah/zero-waste-a-personal-journey-part-1-composting), composting took over 70% of the load of my trash, allowing me to go from one garbage bag a day to one each 3-4 days. This is good enough, but the best is the opportunity it created. It allowed me to have a healthy vegetable garden without buying dirt, or any additive. Granted, there is more to the story. I'm using permaculture principles galore here to the best of my limited knowledge. My garden is savage, and I only work on it a couple of times a year. To save seed, to seed, and to clean up for the next session. I don't disturb the dirt, just add on top of what I have. Here are some images along the time:     Do you have an edible garden?
