bodyMeatpie is an absolute favourite in the classes of snacks in Nigeria. Maybe because most people are meat lovers or just because of the taste of the pie. In my home, it is the preferred snacks even for my sister who isn't a meat lover. Meatpie is a simple snack filled with minced meat and a few other ingredients. Meat-minced (as much as you like) Irish potatoes-diced (3 large ones) Carrots-diced (2 sticks medium size) All purpose flour (about 4 cups) Margarine-(about 130g) Spices (curry, thyme, salt, seasoning-a cube of knorr) Salt Baking powder Now, how is the meatpie made? First let's make the filling. Some people start with the dough but I would start with the filling so that it has time to cool down once the dough is ready. First we cook the meat. The meat is easier to dice once cooked but if you can dice it before cooking, that's fine too. I cook my meat with curry, thyme, seasoning and salt. Always taste for salt, it should not be overpowering. Once all is cooked, add a spoon of flour (or as required) to thicken the mixture. Cook for about a minute more then take off the fire and allow to cool. Next step, making the dough. Ingredients: 1/4 cup Cocoa 1 egg 1 cup all-purpose flour 125g butter 1 tsp baking powder 1 cup powdered sugar Sieve cocoa powder and flour, combine cocoa powder and flour with sugar and baking powder. Mix in egg and butter and combine all until you can form a ball. Then make into small balls and flatten with a fork. I have always tried making the red velvet cake and it turned out to be just a red cake. Yesterday, I made a birthday/Valentine's day cake. And what better cake to make but a red velvet cake. I recently made zobo drink and I added ginger, ripe pineapple (mostly the back, yes the back that is usually thrown out, and a bit of the main pineapple, you can actually use just the main pineapple) and a slice of unpeeled, sweet orange. Now, we know technology then is a far cry from technology now. The health system as the time was not as robust as it is today, communication and transportation were not as developed either. Perhaps with more communication, more and better information might have been given to the people and more preventive measures would have been taken and lives saved, the health systems might have been able to save more if they were what they are today and with better transportation more people might have been able to reach the need hospitals on time. Today, we have better technology in every aspect of life, communication, with mobile phones and the Internet, transportation, with fast trains, cruise ships and planes, and health with its varied information technology systems. Have these technologies helped us cope better with a pandemic than in 1918? In some way it has especially with fast development of a vaccine for covid-19. However, we should also note that technology has helped the Coronavirus spread even wider than the Spanish flu of 1918. Covid-19 spread very fast mainly because of ease of transportation across the world. With people flying or on a cruise ship, the transmission became very fast and practically shut the world’s economies down unlike the Spanish flu which did not transmit as much nor was the entire world affected. So what has advances in technology brought us? A fast spread of a virus and a fast development of vaccines to combat the virus.

The filling consists of diced meat, diced carrots, dice potatoes and a little flour for thickening and spices of course. The dough is made out of flour, margarine, baking powder and a little water 💦. To make the dough the margarine measurement has to be just right, too much and dough becomes too soft and breaks apart while too little will make it too dry and still break apart. Meat pie done right is very delicious and a go to snack in most eateries in Nigeria.

The rice served is usually the party jollof rice and in some cases there is an addition of fried rice (rice cooked with vegetables such as carrots, green beans, and green peppers). In every party, if you haven't served jollof rice, then your party is lacking. Nigerians love the Jollof Rice so much that we sometimes have social media battle with Ghanaians who think their version of the Jollof Rice is better (I mean, like seriously). For me fried rice was the way I prepared rice on Christmas and the Jollof you see here was the new year dish. Bon Appetit!!!
