      "body": "Ingredients\nFor the Ice Cream Cake: \nVegetable oil, for brushing\n1 pint raspberry, passion fruit or other sorbet, softened\n1 pint vanilla ice cream, softened\n1 quart chocolate ice cream, softened\n1 cup chocolate wafer crumbs (about 17 crushed wafers)\n1 loaf pound cake\n\nFor the Meringue:\n1 cup egg whites (about 6 large), at room temperature\nPinch of cream of tartar\n1 cup sugar\n\nDIRECTIONS:\n\n1.Make the ice cream cake: Brush a 3-quart metal bowl with vegetable oil; line with plastic wrap. Fill the bowl with scoops of the sorbet, vanilla ice cream and half of the chocolate ice cream, alternating small and large scoops to create a mosaic of colors and shapes. Place a piece of plastic wrap on top of the ice cream; press down to close the gaps between scoops and even out the surface. Remove the plastic wrap, sprinkle the ice cream with the wafer crumbs and re-cover with the plastic wrap, pressing gently. Freeze until set, about 30 minutes. \n\n2.Remove the wrap and spread the remaining chocolate ice cream in an even layer on top of the crumbs. Cut the pound cake into 1/2-inch-thick slices; completely cover the ice cream with the slices, trimming as needed (you'll use about two-thirds of the cake). Cover with fresh plastic wrap and freeze until firm, at least 2 hours or up to 2 days. \n\n3.Make the meringue: Whip the egg whites and cream of tartar in a large bowl with a mixer on medium-high speed until foamy, about 2 minutes. Gradually beat in the sugar on high speed until the whites are glossy and hold stiff peaks. \n\n4.Remove the top layer of plastic wrap, then invert the cake onto a parchment-lined baking sheet. (If necessary, let the cake stand overturned until it slips out.) Remove the rest of the plastic wrap and cover the ice cream completely with the meringue, making the dome-shaped top slightly thicker than the sides. Form swirly peaks in the meringue using the back of a spoon. Freeze for at least 3 more hours. \n\n5.Preheat the oven to 500 degrees. Bake the cake until the meringue peaks are golden, about 4 minutes, or brown the meringue with a blowtorch. Let the cake soften at room temperature for 5 to 10 minutes before slicing. It is a general notion that the Edikang Ikong soup is very nutritious and this is very much so. Prepared with a generous quantity of pumpkin leaves and water leaves, this Nigerian soup recipe is nourishing in every sense of the world.\nIngredients\n•\t1kg Pumpkin leaves\n•\t500g water leaves (tanilium triangulare)\n•\t600g beef, and dried fish\n•\tPepper, salt and ground crayfish: to taste\n•\t250ml palm oil\n•\t1 ½  Cup Periwinkle\n•\t2 Medium Onions\n•\t2-4 Stock Cubes\n\nAlternative vegetables for those who cannot buy water leaves and pumpkin leaves:\nUse the following to replace the classic Nigerian vegetables for this soup:\n1kg normal frozen spinach\n200g ground frozen spinach\n250g lamb’s lettuce [canonigos in Spanish]\nDefrost the frozen spinach, cut the normal frozen one into tiny pieces and mix with the ground frozen spinach. Wring out the water from these and add them when the written recipe requires you to add the pumpkin leaves.\nWash, pick and cut the lamb’s lettuce into tiny pieces. Add them when the written recipe requires you to add water leaves\nBEFORE YOU COOK THE EDIKAIKONG SOUP\n1. Wash and cut the pumpkin and water leaves into tiny pieces. Put them in separate sieves to drain out the water as much as possible.\n2. Cut the beef into small pieces. Cook the beef and dried fish with the 2 bulbs of diced onions and the stock cubes with as little quantity of water as possible.\nCOOKING DIRECTIONS\n1.\tWhen the meat is done, add a generous amount of palm oil, the crayfish and pepper and leave to boil for about 10 minutes.\n2.\tThe palm oil serves as the liquid in the Edikang Ikong soup. You should try as much as possible to make it the only liquid in the soup.\n3.\tAdd the periwinkle and water leaves and leave to cook for another 5 minutes. You may have to cook for less time at this stage so that the water leaves are not over-cooked.\n4.\tNow add the pumpkin leaves and salt to taste. Stir the contents of the pot very well and turn off the heat.
