Well I am here to change that and loudly advocate the simple change-up to the original recipe and vouch for the extremely rich, mellow flavour it imparts to the end product.  All you will need is a bit of forward planning for the Ageing process.\n\nThe primary distinction between ageing eggnog and creating a fresh batch is the creation of the alcohol/egg/sugar mix and allowing it mature in the refrigerator for a month (at least) or more prior to consumption.  Dairy is only added on the day you intend to serve it.\n\nThis particular recipe is actually a modification of my popular Ultimate Alcoholic Eggnog recipe, tweaked especially for the maturation process.  To describe the result in just one word? The meld of flavours is absolutely fantastic.\n\n**INGREDIENTS**\nMeat\nApprox 800g chicken thighs cubed (can substitute pork or venison)\n\nSpice Paste\n2 shallots roughly chopped\n2 large cloves of garlic, roughly chopped\nSmall red or brown onion diced\n4cm length fresh ginger, peeled and grated\n4cm length of galangal\n1 teaspoon salt\n1 teaspoon ground coriander\n1/2 teaspoon ground cumin\n4 large kaffir lime leaves roughly chopped\n1 stalk of lemon-grass (white part, chopped finely)\n1/2 teaspoon fresh turmeric\n2 green chillies roughly chopped\nApprox a dozen individual curry leaves (or 1 tsp curry powder)\n\nOther Ingredients\n1 small green pepper (capsicum) chopped finely\n1 cup whole cashews\n1 tablespoon brown sugar\n1/2 teaspoon ground white pepper\nExtra salt to season meat\n1/2 cup full cream milk\n1/4 cup pouring cream\nSmall can (approx 250ml-300ml) coconut cream\n1/4 cup yoghurt\nVegetable oil for cooking\n\n\n**METHOD**\n* Season the cubed chicken with a few large pinches of salt, white pepper and the brown sugar.  Mix and set aside.\n\n* Grind or finely chop cashews.\n\n* Add the shallots, garlic, onion, ginger, galangal, teaspoon salt, coriander, cumin, kaffir lime leaves, lemon-grass, turmeric, green chillies and curry leaves to a food processor or a heavy mortar and pestle and process until it becomes a smooth paste.\n\n* Heat a heavy bottomed saucepan over medium-high heat. Once hot add a couple of tablespoons worth of vegetable oil and then add the cubed chicken, turning till browned.\n\n* Once browned remove meat from saucepan and set aside.\n\n* Add another tablespoon of oil and then add the white PPL spice paste, continuously stirring to avoid it burning. Once you can smell the aromatic fragrance of the spice paste strongly (but before it browns) add the finely chopped green pepper (capsicum) and stir through for a further 2 minute before pouring in milk, pouring cream and coconut cream.
