For those who do not know the cachapa is a thin cake of tender ground corn,
very similar to the pancakes,
today I bring you the typical Venezuelan recipe.

Ingredients (Approx 10 cachapas):

4 cups of grains of tender corn (jojoto),
about 3 cups and ground

3 teaspoons of salt

1/2 cup of milk

¾ cup of sugar

1 cup of water

1 teaspoon butter

Preparation:

They cut with a knife the grains of the jojotos,
without getting too deep to avoid cutting the tussa.

The grains are ground with a corn grinder. There must be a mixture somewhat thicker than that of the pancakes.

In a large bowl,
mix that dough with salt,
sugar,
milk and water. The mixture should have a thick consistency.

Heat the griddle (a budare or a pan) on the stove and once it is hot put on medium heat.

With an absorbent paper with oil,
the iron or budare is greased each time a cachapa is made and with a small ladle is poured into the budare around ½ cup of the mixture,
extending it a little with the ladle until forming a tortica approximately 10 centimeters in diameter and ½ centimeter in thickness.

When bubbles form on the entire surface,
turn them with a spatula to cook on the other side until golden brown. Approximately 1 minute per side. And now we can enjoy delicious cachapas,
the traditional is to eat them with artisanal cheese but they can be combined with pork,
ham,
cheese,
chorizo,
bacon,
chicken,
meat,
practically with what we want.

I show some photos to enjoy some yummy cachapas:

Wish you all a wonderful day ahead!
