| body | Hello Everybody! Today I am sharing with you my tasty lasagna recipe. Whenever I make lasagna, I love to make extra batches and store them in the freezer to make it easier to cook on a day that I don’t have time to prepare anything. My son has also taken a pan of frozen lasagna on his snowboarding trips for an easy and delicious dinner to enjoy. Keep reading for the written recipe or watch the video below as I prepare this recipe.  Video recipe: https://dlive.io/video/orsararecipes/c7839f50-71c8-11e8-97f4-27fc95e09096 Ingredients: 1 lb. lasagna, cooked 1.5 lbs. fresh ricotta 10 oz. mozzarella, shredded 6 oz. pecorino cheese, grated 3 eggs 1 handful of parsley, chopped For the Meat Sauce: 12 oz. ground beef 12 oz. ground pork 3-4 garlic cloves, chopped 1/4 onion olive oil 1/2 cup white wine 3 jars of homemade tomato sauce 3 fresh basil leaves  To make the meat sauce, begin by drizzling a little bit of olive oil into a pan and then adding the ground beef and pork. Saute the meat until slightly brown and then add the garlic, onion and white wine. Continue to cook until the wine has evaporated. Lastly, add the tomato sauce and simmer for about two hours. While the sauce is cooking, add the basil leaves for some added flavor.  Once your meat sauce is almost ready, cook the lasagna sheets as per the package instructions. Drain and set aside. I like to sprinkle some olive oil onto the lasagna sheets and lay them on wax paper so they do not get sticky while they cool down. Turn the oven on to 400°F. In a big bowl, mix together the ricotta cheese and the eggs. Add about a handful of mozzarella cheese and a handful of pecorino cheese and mix until fully incorporated. Next, scoop two ladles of the meat sauce and mix together. Lastly, mix in the parsley, a pinch of salt and black pepper. In a baking pan, add about two scoops of meat sauce to the pan and spread it so it covers the bottom of the pan evenly. Next, add three to four lasagna sheets, side by side, to cover the bottom of the pan. Pour two scoops of meat sauce on top and spread evenly over the lasagna sheets using a spoon. Now add two to three scoops of the cheese mixture and spread evenly over the sauce and lasagna. Sprinkle a handful of mozzarella evenly over the cheese mixture, followed by a handful of pecorino cheese. Continue these same steps until you add your last layer of lasagna sheets.  Once you add your last layer of lasagna sheets, cover evenly with two scoops of tomato sauce and cook in the oven for 50 minutes to an hour. Remove the lasagna from the oven after about an hour and then sprinkle the remaining mozzarella and pecorino cheese on top and put back in the oven for about 5-10 minutes, or until the cheese has melted down. To begin, you must have your pizza dough prepared. You can either get it from the store or prepare your own. I have my homemade pizza dough recipe here. Add a couple of tablespoons of olive oil to a pan and cook the sausage until golden brown. Remove from the pan and set aside to cool down. After uncovering the dough, it should look relaxed and ready to be flattened. Sprinkle a handful of flour onto your working area, as seen in the video. Begin flattening the dough using your fingers and palms of your hands. Use a rolling pin to roll the dough into a rectangular shape. Begin adding the sausage along the center of the dough and then layer the mozzarella slices on top. You can also use shredded mozzarella cheese if you prefer. Take your beaten egg and add a tablespoon of water to it and mix. Spread the egg mixture around the edges of the dough. Now begin folding the edges over the center of the dough. The egg mixture will keep your dough sealed. Once all of your edges are folded over, coat the top of the stromboli with the egg mixture. This helps to give it a nice golden crust. Take a knife or fork and make several slits on the top side of the dough to allow air to escape while cooking. Sprinkle a few teaspoons of semolina flour on top of a pizza peel, and place the stromboli on top; this will prevent the dough from sticking. Now you slide the stromboli off of the pizza peel onto the pizza stone in the BBQ. Bake the stromboli on one side for about 4 to 5 minutes and then flip over and continue to bake for about 10 more minutes or until the crust is a golden brown. Remove from the BBQ and set aside for at least 5 minutes. Slice the stromboli and dip into some homemade marinara sauce (recipe found below) and enjoy! Salute cin cin! This pasta fazool recipe is how my mother used to make it while I was growing up in Orsara and has remained a staple recipe that I love to share with my family. Quick, simple and tasty, it makes for a great midweek dinner. Watch the video below for the recipe or continue reading for the written recipe. Video recipe: https://dlive.io/video/orsararecipes/7b4acfe0-6ab7-11e8-8d90-9784636a8b12 Ingredients: For the beans/fagioli: 1/2 pound dry white beans, such as navy or cannellini 1-2 cloves garlic Olive oil, extra-virgin 5 cups water For the pasta: 1 lb. mixed pasta – assorted small shapes (pasta mista) 1/2 cup olive oil, extra-virgin 3 cloves garlic, sliced oh yeah baby, optional (hot pepper) handful of parsley, chopped Salt, to taste  For the beans: Rinse the beans thoroughly with cold water. Place the beans in a pot and fill with water. Cover and soak overnight. Before cooking, rinse the beans again and then place back in the pot with the garlic cloves and a drizzle of oil and cover with 5 cups of cold water. Bring to a boil and let cook for about 15 minutes. Remove pot from heat. For the pasta: Bring a pot of water to a boil. Add salt to your preference. Once boiling, cook the pasta for 2 minutes less than the package instructions. This will give you pasta al-dente. When done, strain, but leave just a little bit of water still in the pot in order to let cook for another 1-2 minutes along with the beans and garlic mix. While cooking the pasta, heat up some olive oil in a small frying pan, enough to cover the garlic and hot pepper once added. Once the oil is warm, add the garlic and hot pepper and fry for a couple of minutes, making sure not to let them burn. Add the beans and a little of the water they were cooked in into the pot of strained, cooked pasta. Mix altogether and serve immediately. Enjoy and cin cin!  |

| body | Hello Everybody! Today I have an easy and delicious pasta e fagioli recipe to share with you all. This pasta fazool recipe is how my mother used to make it while I was growing up in Orsara and has remained a staple recipe that I love to share with my family. Quick, simple and tasty, it makes for a great midweek dinner. Watch the video below for the recipe or continue reading for the written recipe. Ingredients: For the beans/fagioli: 1/2 pound dry white beans, such as navy or cannellini 1-2 cloves garlic Olive oil, extra-virgin 5 cups water For the pasta: 1 lb. mixed pasta – assorted small shapes (pasta mista) 1/2 cup olive oil, extra-virgin 3 cloves garlic, sliced oh yeah baby, optional (hot pepper) handful of parsley, chopped Salt, to taste  For the beans: Rinse the beans thoroughly with cold water. Place the beans in a pot and fill with water. Cover and soak overnight. Before cooking, rinse the beans again and then place back in the pot with the garlic cloves and a drizzle of oil and cover with 5 cups of cold water. Bring to a boil and let cook for about 15 minutes. Remove pot from heat. For the pasta: Bring a pot of water to a boil. Add salt to your preference. Once boiling, cook the pasta for 2 minutes less than the package instructions. This will give you pasta al-dente. When done, strain, but leave just a little bit of water still in the pot in order to let cook for another 1-2 minutes along with the beans and garlic mix. While cooking the pasta, heat up some olive oil in a small frying pan, enough to cover the garlic and hot pepper once added. Once the oil is warm, add the garlic and hot pepper and fry for a couple of minutes, making sure not to let them burn. Add the beans and a little of the water they were cooked in into the pot of strained, cooked pasta. Mix altogether and serve immediately. Enjoy and cin cin!  |
