Unfortunately,<br> we were so busy that we couldn\u2019t take any photos,<br> but my daughter,<br> who came along to help,<br> managed to snap a few pictures \ud83d\udc4f\n\nThe sushi rolls were filled with smoked tofu,<br> cucumber,<br> pickled daikon and radish (*bettara-zuke* style),<br> lightly pickled savoy cabbage with ginger and Shiso,<br> and ume paste,<br> then topped with arugula and fried onions. Along with soy sauce and wasabi,<br> I also served a sesame dressing I\u2019m planning to launch as a product next year. One hundred plates were gone really quickly.\n\nOne of the organizer of the Vegan Christmas Market was there and asked us to serve sushi there. I was so happy to hear so many people praising the vegetable-focused sushi that I love making and often sell at a local market too.\n\nI\u2019m currently in the process of applying for a new office (there are 8 applicants including me\u2014it\u2019s not too many by German standards ...),<br> and if I get it,<br> I\u2019ve started dreaming about hosting gatherings where we can make seasonal sushi together.\n\nUsing local vegetables of the season,<br> I\u2019d like to try making *futomaki* (thick rolls),<br> pressed sushi,<br> hand-formed sushi,<br> steamed sushi,<br> and other styles,<br> and then enjoy them together. Sushi offers so much room for seasonal creativity! I feel like this opportunity is calling me,<br> so I\u2019ll think about it for a few more days and see if it feels right.
